Chicken & Black Bean Burritos

Made this as written and found it pretty bland. I'd rate it about 3.5 stars. It definitely needs something added to spice it up because the soup is not very flavorful. If I make it again, I will probably add some taco seasoning, or similar. Gave it 4 stars for convenience.

HERDEZ® Mexican Cornbread

Very salty and greasy with awful flavor. Nothing at all like cornbread I've eaten in the past. I guess the 2 TABLESPOONS of baking powder + 1 cup of cheese + 1 tablespoon of kosher salt should have clued me in.

Red Beans and Rice with SPAM®

4 out of 5 stars as submitted. Very good base recipe. 5 out of 5 stars with the addition of green bell pepper, red onion, garlic, cajun seasoning and a dash of wine vinegar. Excellent cheap, easy meal.

Ancho-Chipotle Salsa

I'd rate it 5 stars except there was way too much cilantro for my tastes. Made it to-the-letter the first time and the flavor was overpowering. The second time, I cut back on cilantro to about 1/2 tsp. and also doubled the chipotle peppers for a smokier taste. With those two changes it was excellent.

White Chocolate-Macadamia Nut Oatmeal Cookies

Excellent! Like the previous reviewer, I doubled the recipe and added dried cranberries along with the white chocolate chips and macadamia nuts. The dough gets very thick at the end when you're adding the oats, nuts, etc., so folding those in with your hands may be easier than trying to use a spoon. The most important thing here is to NOT overbake! My first batch came very dry and hard after 12 minutes with just so-so flavor. After experimenting, I found 9 minutes was perfect. When the edges are golden brown, and maybe a little on the top, they're done.
