Layered Peppermint Bark

Great peppermint bark, I made EXACTLY per recipe. NEXT TIME I will do this: 1) Omit cream from chocolate, it makes it too soft and melts on hands too easily. 2) Melt ALL of the white chocolate at one time and spread on sheet, layer with 1/4 crushed candy 3) Spread all of the semisweet chocolate on top of chilled white chocolate, the semisweet chocolate has a strong flavor, so make the top layer of the semisweet chocolate thinner than the white chocolate ( I was temped to use equal parts chocolate just because I had the semisweet chips left). 4) Sprinkle with the rest of the crushed peppermint candy. Like I said, I tried the exact recipe and the semisweet chocolate didn't ever set up correctly.

Chinese Chicken Fried Rice II

Very good. Added 1/4 head of finely shredded cabbage. Wilted cabbage in hot pan before adding to mixture. Next time I will add another egg, just preference. YUM, the whole family loved it.

Heavenly Angel Food Cake

AWESOME!!! Just drizzled a glaze of orange juice from one orange, some rind, and powdered sugar over the top and YUM! Not hard and way better than the store. Used a Bosch to whip up the eggs in about a minute, maybe less!

Peppermint Bark

Its OK. I am a huge peppermint bark fan and my favorite is the Williams-Sanoma brand, but its very expensive. Don't use the oil or it won't set very well. I prefer to use semi and white chocolate melts so they melt easy. The better quality chocolate you use the better, like the recipe states. Use Peppermint OIL not extract if you want it PERFECT. Extract has alcohol and will cause it to become a little grainy. Use 3-4 candy canes smashed in a plastic ziplock. I also use a Mini crockpot to melt the chocolate, its so easy.

Southwestern Egg Rolls

These are really good, I did 1 1/2 recipe for filling and used 8 egg roll wrappers instead. The egg rolls were on the smaller side and one adult could easily eat between 2-4 egg rolls for dinner. Added a little more spinach and baked in the oven for 12 minutes at 400.

Stuffed Artichokes

Awesome! My Italian family has made these for years. I just use 1 cup Italian bread crumbs, 1/2 cup Parmesan cheese, and one clove of garlic. Add Olive oil, not vegetable oil. Fill Oven safe pot with lid 2 inches high with water. Bake 1 hour, check at 30min to make sure there is enough water in the bottom of the pot. If needed, add a little water. Bake 1 1/2 hour til leaves pull easily out of artichoke.

Poppy Seed Onion Bread

To make without a bread machine: Put yeast and warm water in mixer like Bosch or Kitchenaid, let sit 5 minutes or until frothy. Add brown sugar, butter softened, onion, onion powder, dried milk, salt, poppy seed, and pepper in order. Lightly mix for 15 seconds. Add flour until it pulls away from the sides of the mixer and the walls of the bowl are clean from any dough or flour. (about 2 1/2- 3 1/2 cups) Let knead for 10-12 minutes. Put in a lightly greased bowl and turn to coat all of the ball of bread. Cover and let rise for about 1 hour or until it doubles in size. Punch down and form into loaves (or braid and place on greased baking sheet) and let rise again for about 1 hour or until it doubles in size. Bake for 20 - 25 minutes at 350. The bread is AWESOME! I add extra poppy because we love poppy. The recipe as written is a 5 star recipe!

Mom's Zucchini Bread

Awesome recipe!!! Used 3-4 cups of zucchini, 2 Cups sugar (one white, one brown), 1 cup whole wheat flour and 2 White flour, Just a few modifications as other suggested. Also used a dash of pumpkin pie spice in addition to the cinnamon. Thank you for the wonderful recipe!

Whole Grain Breakfast Cookies

Excellent, used 2 eggs and peanut butter and they were awesome cookies, not even just for breakfast, for ANY occasion! Also I used craisins but any dried fruit would be great!

Chili Rellenos Casserole

Excellent. Use 3 eggs and one can of evaporated milk, leave out the regular milk. Used an 8x8 pan and increased 1st bake to 30 minutes and second time after sauce is added to 20 minutes. Cooled 10 minutes. Use an enchilada sauce instead of plain tomato, much better! My Sauce: 1/2 Onion chopped 2 T oil 1 can tomato sauce 2 tsp chili powder 3 T salsa salt to taste Saute onion with oil til tender. Add all remaining ingredients and simmer on low til thickened, pour over casserole and continue to bake 20 minutes.

Peach Preserves

Awesome, I made it with white peaches and skinned half of them and left half with peel. Nice pink color! I boiled them for 15 min. because we like it a little chunky. I used a pack of 1.75 oz. pectin and it was perfect. AWESOME! Not too much sugar, most recipes call for equal parts sugar and fruit, I like the less sugar (although, don't worry, its pretty sweet!).

Roasted Green Chile Stew

Make as written with minimal preference changes. I used chicken instead of pork. Used 4 cups chicken broth, 1 1/2 lbs roasted Hatch Green Chile and instead of roma tomatos (which I didn't have) I used one 15oz can of petite diced tomatoes WITH juice. PERFECT! Thank you for the recipe!

Zippy Shepherd's Pie

Great Shepherd's Pie recipe, I suggest you half the entire recipe if you have a family of 4. We have soooo much left over, but oh well, I bet its good heated! I loved the curry and even added extra to suite my taste. I would DOUBLE the POTATOES! I had to cook more so the top of my 9 x 13 pan would be covered.

Waffles I

Our Family loved these waffles. I use all fresh ground whole wheat flour. I added 1/4 tsp of dry active yeast and they were really good, it just gives them a little bit of a "malted" flavor.***UPDATE*** Added 3/4 cup pumpkin puree, 1/4 tsp cinnamon, 1 add'l T Sugar. PUMPKIN WAFFLES were to die for!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

My family love this soup, I used green lentils only because I couldn't find red. I added 3 cloves of garlic, because we love garlic. This is a sweet-savory soup and its delicious! I used a hand held immersion blender and it was not messy and no transferring from pot to blender.

Holiday Chicken Salad

Used sliced almonds toasted instead of pecans because its what I had. Left the green pepper out due to preference. AWESOME! Added Garlic powder and LOVED IT! Thanks for the YUMMMMY recipe. Easy, fast and pleases a crowd.
