Carrot Cake III

Very good recipe. I did 1 cup white sugar and 1 cup brown sugar, doubled the vanilla and cinnamon. Replaced 1/2 cup of oil with applesauce and it was perfectly moist and dense. Baked 2 - 9" rounds at 325 for 32-35 minutes. I added an apricot filling in the middle of my 2 cakes. I used about 1/2 up of the icing and mixed in 1/2 cup of apricot jam. The frosting is wonderful, keep it as is!

Asian Stir Fry Sauce

Very good sauce. I didn't have the dry sherry, but it still turned out very good. I would recommend this sauce to anyone who wants a basic, easy stir fry sauce. I cooked my meat, then added the sauce and steamed veggies. Put it over rice. Not too salty for a stir fry sauce.

Chicken Pot Pie IX

Great recipe! Double sauce, add a little more spice and some cubed potato's and its perfect. Reduce temp to 375 for 35-40 minutes.

Yum, the best pumpkin bread ever! Double spices. I used egg beaters and 1/2 applesauce instead of oil. It came out perfectly moist!

Buttery Soft Pretzels

Yum, yum, yum! This is a great recipe. Keep in mind you are making a type of bread. You do not need to use all of the flour. I only use about 3 cups each time. Dip in soda mixture, sprinkle with salt, bake at 400 for 8-10 minutes then brush with butter. If you would like a cinnamon sugar pretzel - do not sprinkle with salt - Bake, brush with butter and sprinkle with a cinnamon sugar mixture. AMAZING!! Thanks for the awesome recipe!

Beef or Chicken Marinade

Very Yummy! Make with 1 14oz of canned corn. To make mini muffins, in a 24 count pan bake for 12 minutes at 375 deg.

Really Good recipe, not really peanut buttery, but enough - up it to 1 cup. The vanilla is not too much in my opinion. I will use this recipe again.

Sweet and Spicy Sweet Potatoes

So yummy! Loved the substitution of Montreal Seasoning for poultry season, increasing brown sugar to 2 Tbsp, and adding cinnamon. So good, will definitely make again.

I halved the recipe. It turned out really good. I recommend cutting the hot sauce and Cajun spice in half if you are feeding kids with it. Overall pretty darn good!

Spicy Sweet Potato and Coconut Soup

Excellent flavor! Very similar to a curry sauce, but with potato base. I did not have curry paste, so as others have recommended I substituted 1 tsp cumin, 1 tsp chili powder, 1 tbsp curry powder. I love ginger so the fresh ginger is a MUST. You can really taste the difference. I cooked my potatoes in the broth and my ginger and onion in a separate pan. I added the spices to the onion and ginger and then combined into the broth when the potatoes were tender. Puree in blender and WA-LA! Puree 1 bunch of cilantro with 1/4 cup lime juice and use as a topping. Or just sprinkle with cilantro and a lime wedge.
