Delicious Ham and Potato Soup

Reviewed: Nov. 21, 2010
Awesome as written. I didn't have ham on hand so I used a half cup of bacon bits. Oh and I just left the skins on my potatoes and added one sliced carrot for color. Thanks for the recipe. I made this a second time with ham and prefer the bacon even though both are good.

Chili Rellenos Casserole

Reviewed: Nov. 21, 2010
Excellent. Use 3 eggs and one can of evaporated milk, leave out the regular milk. Used an 8x8 pan and increased 1st bake to 30 minutes and second time after sauce is added to 20 minutes. Cooled 10 minutes. Use an enchilada sauce instead of plain tomato, much better! My Sauce: 1/2 Onion chopped 2 T oil 1 can tomato sauce 2 tsp chili powder 3 T salsa salt to taste Saute onion with oil til tender. Add all remaining ingredients and simmer on low til thickened, pour over casserole and continue to bake 20 minutes.

World's Best Lasagna

Reviewed: Oct. 24, 2010
EXCELLENT! Made as directed, except only used 1lb of sausage and no other meat. I didn't have fennel seeds on hand and used fresh basil. I also used oven-ready noodles. The ONLY thing I recommend it to REDUCE the SALT!!! I didn't and I wish I would have. Use 1tsp at the MOST !!! But like I stated earlier, EXCELLENT lasagna.

Iced Pumpkin Cookies

Just OK. Made exactly to recipe and they don't do much for our pumpkin loving family. Just Ok even with the cream cheese frosting.

They are OK. I followed the recipe exactly and then added cream cheese frosting to make them better. But still just OK.

These are excellent, hard to roll thin, but great! They are better a little undercooked.

Peach Preserves

Reviewed: Aug. 19, 2010
Awesome, I made it with white peaches and skinned half of them and left half with peel. Nice pink color! I boiled them for 15 min. because we like it a little chunky. I used a pack of 1.75 oz. pectin and it was perfect. AWESOME! Not too much sugar, most recipes call for equal parts sugar and fruit, I like the less sugar (although, don't worry, its pretty sweet!).

Stuffed Artichokes

Reviewed: Jul. 20, 2010
Awesome! My Italian family has made these for years. I just use 1 cup Italian bread crumbs, 1/2 cup Parmesan cheese, and one clove of garlic. Add Olive oil, not vegetable oil. Fill Oven safe pot with lid 2 inches high with water. Bake 1 hour, check at 30min to make sure there is enough water in the bottom of the pot. If needed, add a little water. Bake 1 1/2 hour til leaves pull easily out of artichoke.
