Spinach Frittata

I had a bunch of fresh spinach and was running out of recipes...and found this one. I tried it out - and it turned out beautifully!!! I did not have some of the ingredients, but used bacon bits (real ones) instead of chicken. I topped with sliced tomatoes and the kids ate it up!!!! I also brought to a Mom's luncheon and it was a HIT!!! I told them despite the taste, it is TOOO easy to make! This is a 'keeper!'

Whipped Cream Cream Cheese Frosting

YUM!!! I have now made this twice - one, a double batch, and tonight a single batch - and it will be gone by tomorrow!!! The first time I used reduced fat cream cheese and grain sugar. Tonight I used powdered sugar and whole fat cream cheese. I found that I had more lumps with the powdered sugar and had to beat that longer. It was also less 'stiff' than the frosting with the 'real' sugar. Either way - it is SUPER YUMMY and you want to eat the ENTIRE BOWL!!! It is THAT good! Just make sure you beat the whole cream in a cold bowl until you see peaks - and you should be fine! LOVE IT! 10+++ Stars!!!!

Slow Cooker Chicken and Dumplings

HOLY COW - HOW SUPER EASY AND DELICIOUS!!! I could not believe how easy and tasty this was. I was truly skeptical, but it turned out wonderful! I used frozen chicken breasts, a cream of chicken and a cream of mushroom, added some spices that we like, and the rest of the ingredients - and that was it. TOO easy and it will be made again and saved! The only hard part is convincing folks that it took me forever to make! :)

Apple Pie I

Much like the other reviewers, I added lemon juice, flour, vanilla and nutmeg. I had never made an apple pie before, and let me tell you - I have now made two of them in less than 24 hours! It is THAT GOOD!!! I cheated and used premade crusts, but that was the only short cut. The first time I cut each and every apple, but the second time, I used a cheese grater, the long cuts, and that worked very well! I added milk and cinnamon sugar to the top and it made a nice color! Definitely a keeper recipe!!!

Spaghetti Torte

What a great little recipe! The fresh basil makes the entire house smell so good when baking this! I could not give 5 stars, as I tweaked a couple things...and would do some different things next time. But, yes, there will be a next time! First, I used a can of diced tomatoes (drained). I used fettucine noodles,and those worked really well. Other than that, I followed the recipe to the letter - and what I would change would be: MORE CHEESE! It needs more melted cheese! More provolone!!!! More Spice!! I'd add garlic, salt, more fresh basil! Maybe add artichoke hearts and olives - we'll see. Other than that - it is a great little recipe that is a keeper!

Mini Meatloaves

Very tasty! Made them in muffin pans and turned out well!!! Kids loved them as did my husband! Nothing was left! I did not have oatmeal, so I used crackers and it turned out GREAT! Will be a 'keeper' recipe!

Italian Spaghetti Sauce with Meatballs

I was afraid to make the meatballs by using the sauce, so the first time I made this recipe, I sauteed the meatballs. They turned out great and the sauce was so good that I made it again! But this time, I did it exactly as the recipe calls for. OMG - GREAT! My kids loved it, my husband loved it - there was nothing left for leftovers!!! I will not use jar sauce again as this is so good! I will tell you to start this early - this is not a recipe that you can make last minute and turn out right!

Picadillo

And that rating is saying a lot!!! My Mom was taught by my Grandma (a great Cuban cook!) how to make authentic Picadillo. I did not have her recipe handy, so I used this one. A bit much on the cloves, but not bad! Now I just need to make the black beans and rice - and it tastes like home! I'll definitely keep this recipe and use again in case I cannot find my Mom's!!! Thanks!!!

Chicken Pot Pie III

Super easy and tastes just like the premaid frozen ones!!!! Just better!!!! Two cans of soup really fill up the pie crust (if you use ready-made frozen crusts) - so be sure to get deep dish frozen crusts if you are wanting to have room for the filling. Definitely a 'keeper' recipe for ease of use as well as taste! I can make this so quick - and with three young kids - that is saying a lot!!!!

Banana Bread VIII

I used to make banana bread with eggs, but my son has developed an egg allergy. I tried this so he could eat this with his sisters....and this was fantastic! I added 1/4C milk, and the bread was a bit mushy. I will try this recipe again w/o adding milk and see what happens. I did also add chocolate chips and some walnuts to top it off. Overall - a great EGG FREE recipe!!! **It did firm a little overnight, but much. That did not matter as the kids LOVED it and we are making more this morning!!!
