Black Bean Brownies

I tried it without the chocolate chips or the instant coffee, and I absolutely love them! Not only are they easier to make than traditional brownies, but the texture is smooth, and they are delicious! I think when I make them again, I'll make them with either a little more cocoa powder or with the chocolate chips on the top. I am most definitely planning on making these again!

Salmon with Dill

This recipe is fantastic! I didn't have any onion powder, so I substituted garlic powder. The salmon is moist and falls apart on your fork. The flavors are rich and meld well with the natural flavor of the salmon. I cooked approximately 2lbs of salmon, so I doubled the recipe. However, they were large pieces but I still only cooked them for 20 minutes. Keep that in mind for when you time your salmon! I will be making this again for sure!

Mediterranean Lemon Chicken

Although this did not taste bad, it was very plain. However, the reheated leftovers tasted better than just out of the oven. I may try to find an ingredient that will contrast the acidity of the lemon juice because I think that is part of the reason it was only ok versus amazing.

Roasted Asparagus and Mushrooms

I think that it would make a lot more sense to mix the ingredients ON the pan instead of in a bowl, seeing as the shape of the asparagus is awkward in a bowl. The rosemary has a very stick-like texture, which does not cook out with this recipe and is something I found unappetizing. I used very thick asparagus, and with the temperature and time that was given, it was not fully cooked when taken out of the oven. I think that it should be specified in the recipe to use thinner asparagus. I felt as though the taste was not as good as it could have been. Maybe adding some garlic would make it a little better, as was suggested in some of the comments. Overall, I'd say that the general idea of the recipe has potential, but with how it was written, I think that it needs a lot of work.

Orange Honey Garlic Chicken

I used chicken breast tenderloins instead of a whole chicken (it's what we had in our fridge), and cooked it for 1 hour instead of 1 1/2 hours. It was very tangy, and my boyfriend loved it!

My dad's birthday is on Halloween, so I made these for our annual front yard bonfire. Everyone loved them! The only thing I changed was that I used half a slice of cheese vs a quarter slice.
