Banana Muffins II

I've made these twice with banana's that have turned and the kids love them! First time I made exact as recipe and they were good. Second time I made them with applesauce instead of butter (neighbor kid allergic to milk proteins) and added a bit of allspice--amazing! I double the batch and they are gone! Keep this recipe--simple, easy and fast!!

Homemade Refrigerator Pickles

Reminds me of pickles from grandma as a kid. I read some of the other reviews, and made the following changes: 1. Used Truvia sweetener at 1/2 the amount for the sugar. 2. I added 4 cloves crushed/chopped garlic 3. Used sweet banana peppers instead of green. Not too sweet, not too tart. Great on sandwiches.!

Melt In Your Mouth Chicken Pie

I've made it twice now and both times the dish at the end of dinner was empty. Put frozen vegtables instead of egg. Didn't have buttermilk so I used regular milk and a bit of heavy cream. Great fast and easy meal using a store cooked chicken:)

Ham Bone Soup

Yummy! Changed a few things: Sweet potatoes instead of regular. Red bell pepper instead of green. Used "italian seasoned canned tomatoes" instead of regular. Also used low sodium chicken broth. Everyone loved it. Could not believe how much flavor it had despite have so few spices/herbs.

Pasta with Scallops, Zucchini, and Tomatoes

Yummy! Flavorful and delicious. We added the shrimp, and it worked well. Didn't use quite as much olive oil (maybe 2 tablespoons.) Also added about 1 tablespoon fresh cilantro after cooking at serving time. This is a keeper.
