Mexican Sour Cream Rice

I was looking for a new side to tacos, and this was wonderful. My kids took one bite and said it tasted like chicken enchiladas... So now we make it as a main dish, only I stir in chopped cooked chicken, some cumin and a can of black beans. We LOVE it! Thanks for a great recipe that is truly different.

Millet-Stuffed Peppers

Replaced the tomatoes with our favorite salsa and added some cumin. Yummy! This will be added to our regular dinner favorites! Love that it cooks in the microwave! Thanks for a great recipe.

Basic Crepes

I forgot to bake a loaf of bread for the kids to have PB&J today so I was looking for something else we could use as a substitute. I have wanted to try crepes for a while and this recipe was quick, just what I needed! They were a huge hit. The kids ate them all and I had to make another batch. I added 2 Tbsp of sugar and a dash of vanilla as others had mentioned and mixed everything with my stick blender. We ate them with peanut butter and banana, PB and applesauce, PB and apple butter, garden vegetable cream cheese and pepperoni... They thought of all sorts of fillings for the next time we have them. My 4 yr old asked me to make them every day! (One note: I made about 10 10-12" crepes from this recipe. Each of my 5 kids ages 1-12 ate at least 2, you might want to double up if you are cooking for more than 2-3 people.) Thanks for the great and EASY recipe!

Dr. Michael's Yeasted Cornbread

This bread is so yummy! I have made it several times and it always turns out beautiful. My family loves this bread. It is so soft and light. I've made it exactly as written but I usually use 1 c cornmeal and 3 c flour, and I often replace the milk with buttermilk. Thanks for a great recipe.

Cake Mix Cookies IV

Love these. Always a good last minute cookie. Easy to have supplies on hand. I know it takes away from the simplicity, but if you add about 1/2 c flour, 1/4 c brown sugar or so, a good dose of vanilla, about 1/2 tsp of baking soda and a pinch of salt it kills a bit of the cake mix flavor. Try it...

Yum-Yum Corn

My family is addicted to this dish! It is soooo yummy! Love it as is, but I usually cut the butter in half, add in a handful or two of shredded cheddar and leave out the parsley. Sometimes if I'm in a pinch, I just heat it in the microwave until everything is melted. Thanks for the great recipe!

Eggless Peanut Butter Chocolate Muffins

These were fun. The batter smelled like no bake cookies. My kids gobbled em up. My only sub was almond milk for milk due to lactose intolerance. I did need to bake them a few minutes more. Will make again. Oh, and I got 21 good sized muffins out of this recipe.

Spinach Alfredo Sauce (Better than Olive Garden®)

Yummy and easy! Pulled this together last minute when I realized I forgot to buy pasta sauce. My only sub was 2% milk for cream, because thats all I had but my family still loved it.

Buffalo Chicken Wing Sauce

Somehow I have gotten by on equal parts butter and Frank's with a bit of garlic thrown in for years. But i'm not sure how!!! This sauce is amazing!! It is so much more flavorful than any I have ever had in or out of a restaurant. My only change was to add about a tsp of honey to balance it just a bit. This is perfect and i cant wait to share it with every wing lover I know!

Apple Scones

These are wonderful! Per others suggestions, I did sprinkle in a little cinnamon, nutmeg and cloves, but otherwise follow the recipe as written. Yummy! My family and I thought they tasted like apple fritters only without the guilt of being deep fried. We're adding this to our favorites! Thanks for a tasty treat!

Farm Macaroons

I was craving a coconut cookie, but was almost out of butter so I tried these. They did not disappoint. A little crunchy on the edges and soft and chewy in the middle... I followed some other's advice... I used 1/2 c ground almonds instead of the almond extract. (I liked the added texture that came from the almonds.) I threw in about 1/2 tsp of coconut extract. I didn't have cream of tarter so I substituted a good squeeze (1 tsp?) of fresh lemon juice. I upped the flour to 1/2 c and was very generous with my cups of coconut. I wasn't paying attention and I dumped the sugar into the flour/coconut mixture before I whipped the egg whites... Luckily I had only put in about 3/4 c, so I went ahead and whipped about 1/4 c into the whites, not sure why, other than peace of mind. I used a 2 tsp-ish cookie scoop and got 41 cookies. I baked them 10 min on the middle rack and let them finish on the top rack (about 8-10 more min). They browned up nicely, but were a little smoother in appearance than the photo. Next time I might try rolling them in a little coconut before I bake them, just for appearance. Love that they are a bit healthier than most. Will make them again. They would be heavenly with a whole almond on top and drizzled with chocolate!

Summer Salad with Cumin-Crusted Salmon

This was delicious! I was looking for something light and summery, but not boring and this was it. I didn't have OJ concentrate, so I substituted lemon juice and a tsp of sugar. Otherwise, no changes. We loved the orange and feta together. Will definetly make again.

Sloppy Sams

My family enjoys lentils and use them as a substitute for taco filling, so we thought this would be tasty. We tried this recipe twice... The first time as written, which resulted in a fairly bland sloppy joe per my family. So the next time I tried preparing the sauce then adding the lentils and water to let them simmer together. I was hoping the lentils would absorb more flavor. Sadly, they still left us cold. I appreciate that it's a healthy recipe, but they were missing something, and my family didn't like them enough to try again.

Donut Muffins

So yummy! We have to double the batch. We also skip the extra butter and cinnamon/sugar mix. We roll them in powdered sugar after they have cooled a bit and they taste just like powdered donuts!! We didn't like the nutmeg so much when we used the cinn/sugar topping, but with the powdered sugar it was perfect.

Espresso Bark

Very yummy and fancy! We wanted to make chocolate covered coffee beans, but this looked easier, and it was! We used milk chocolate chips and coursely broke up the beans with a hammer. After we spread it in the pan, we sprinkled it with white choc chips, let them sit a few minutes until warm and then swirled them with a toothpick. We also sprinkled some crushed peppermint on top because dad likes peppermint coffee.

Strawberry Oatmeal Breakfast Smoothie

Yummy! I didn't have soy milk, so I used about 1/4 c plain yogurt. Replaced the strawberries with frozen blueberries and threw in a bit of ice. I added pomegranite/blueberry juice to get it to the right consistency. The oatmeal was different, but definitly not bad. I made it for my husband who was on a fast, but my kids drank most of it! Will make this again!

Easy Morning Glory Muffins

Made these this afternoon and wow! They really do taste like carrot cake. Using the other reviews and a bit of my own creativity... Used 1 1/2 c whole wheat and 1/2 c unbleached for flour, used brown sugar and cut it back to 3/4 c, only used 1 c of carrots (because I ran out), pecans instead of walnuts, 1/2 oats instead of coconut (again, all out), 1/4 c melted butter and 3/4 c applesauce for oil. Left everything else as is. We love 'em! Baked up light and beautiful. Made 36 very full mini muffins. We are all out of cream cheese or we would have made some icing to perfect them. Thanks for a great recipe!
