Pound Cake III

This is a pretty good pound cake. The consistancy is off a little. I think there's just a tad too much sugar in it for me. If I make this one again, I think I'll cut the sugar by 1/4 to 2/3 cup. The taste is good with just the vanilla, but like I said it's a little sweeter than I'm used to in a pound cake. I give it an A-.

Eggplant and Pepper Parmesan Sandwiches

I found this while looking for something else to do with my eggplant besides eggplant parmesan. This is now one of my favorite sandwiches. The tapenade is a must. Without it this is a very bland sandwich. I couldn't find it at first and tried something in it's place (can't remember what). Finally found the tapenade, and used the green olive version and made these again. All I can say is, Wow. The tapenade kicked it to another level. I grill my veggies on the outdoor grill to give it that extra flavor and grate the parmesan fresh. It's the perfect summer sandwich.

Mostaccioli with Spinach and Feta

I love this pasta. I use a can of italian style chopped tomatoes and this gives it a wonderful taste. I use the spiral pasta as it seems to hold onto some of the ingrediets better.

Juicy Roasted Chicken

As is, I thought this chicken was moist but pretty bland. I made it a second time and added rosemary. I cut small slits in the skin and put the seasoning under the skin with a couple pats of butter. This seemed to allow the flavors to sink in. Wow, that kicked the flavor up.

Oatmeal Peanut Butter Cookies III

Best peanut butter cookie ever. It doesn't make a lot (about 2 dozen small cookies) , so when I make these for work or the family I have to double the recipe. The cookies by themselves is wonderful, but add the icing and they are to die for.

Cream Cheese Cookie Cups

I made these for Christmas last year. Yum. I loved these and so did my friends and family. I think the mix of flavors of the cookie and cream cheese mixture is delicious. To make the filling easier, I put it in a plastic baggie and cut out a corner. (maybe I'll invest in one of those pastry things some day). But the baggie fit my needs for this and made filling these a lot easier and less messy.

Pistachio Cream Cheese Fingers

These are my staple Christmas cookies. I make them every year. My family calls them grinch fingers. They are very addictive. Make sure not to overcook these. Take them out when the just look dry on top. I make sure that I can see no brown on them. I usually melt more chocolate than the recipe calls for also.

No Bake Peanut Butter Pie

This is my favorite pie, ever. It is so rich and creamy. I do make my own crust out of chocolate graham crackers. I pound the crackers into crumbs and mix with just enough butter to moisten and press it into the pie plates. One of my coworkers had made a pie like this with a storebought crust and says the homemade crust makes it so much better.

Annie's Fruit Salsa and Cinnamon Chips

5 stars just for the chips. The fruit salsa is good too, but you can eat the chips alone. As for making the chips, I wouldn't suggest coating both sides as other reviewers have said. I did this the first time and about half of them practically fused onto the pan.

Toasted Coconut, Pecan, and Caramel Pie

This is one of the best pies and I don't even care for coconut. I made this once for my family and both pies were devoured in one night. I made one half of one pie without coconut (since my nephew absolutely refused to eat it with) and according to him this is the best pie ever. I wouldn't change anything, just one suggestion. The second time I made these, I put less than 1/4 of the cream cheese mixture for the bottom layer. I also added the caramel before coconut mix for the middle layer. This made it much easier to completely cover the middle layer with the rest of the cream mix.
