Tomato Salsa

I made 1/4 of this recipe for a trial run. Now I wish I had of done the full about. It is great! I plan on making more and can it. Because our family loves a good salsa!

Sun-dried Tomatoes I

Made this the other day/night. First time ever trying to make sun-dried at home. We all think this will be great (if any left by then) this winter in so many great soups, stews, and pastas. I tried it with both Roma and Beefsteak tomatoes. I highly recomment the Romas, as they have less juice, and did not take 14 hours the beefsteaks did. Romas were done in about 8 hours.

Homemade Tomato Sauce I

I made this for dinner two nights ago. My family all thought it needed 'something' after it was done simmering. The solution was about a scant 1/8 of a cup of sugar to cut the acidy level. I used 20 Roma tomatoes, so no need for the addition of the tomato paste. Will use this recipe for canning the bumper crop of Romas!

Pizza Salad II

This is great! I made this last night. I just measured the meat and veggies by sight, and made the dressing with Good Seasons dry mix, and added it last night. I omitted the salt, and added the cheeses today. Highly would recommend this as a twist on pasta salad. My whole family enjoys it!

Exchange Gang Pasta with Shrimp

I made this today, doubled the recipe for my family of 3 teenage boys, my preteen daughter and my Hubby. I was so eager to make this, so I subbed the white wine with chicken broth and the half and half for 2% milk. The entire family enjoyed this. I served it with some good crusty french bread. A very easy dinner but looks and tastes wonderful! Try it, you will not be disappointed!

Pineapple Carrot Salad

This is a nice way to get kids to eat their fruit and veggies! I replaced the yogurt/salt with about 1/2 cup mayo slightly thinned out with about 1-2 Tablespoons pineapple juice. This recipe is a hit as written with my family. But to add a twist to it, this last time I made it, I added a medium Red Delicious apple that needed a recipe to be used in, and before serving, I topped with a few English Walnut halves. The first time I made this, the weird looks the family gave it, was too funny. But they changed to happy faces after the first bite. A key factor is to make the night before, or early in the morning, so it can get chilled and flavors meld together.

Strawberry Spinach Salad I

I am real impressed with this recipe! My family a salad to them must be a lettuce/chef type salad with ONLY the following dressings: Ranch, French, or Honey Mustard. I enjoy trying different salads and dressings, and when I seen this, I knew it would be great. Only alteration I did was cut the sugar down to 1/4 cup because my strawberries were quite sweet, and let each person add the chilled dressing to the chilled salad. The recipe says the dressing is for 4 servings, but a little of the dressing goes a long way. With strawberry/spinach season upon us, I know we will be fixing this again. *UPDATE* We made this again last night. I had a few overly riped strawberries, so I pureed them in the blender and added to the dressing. This was very good as well!

Frog Cupcakes

My daughter LOVES frogs, so for Easter, we made these and bunny cupcakes. We used carrot cake, and cream cheese icing. For the eyes for the frogs, we cut 3 circles from 1 large marshmallow, and cut them in half moons, making 3 sets of eyes per mashmallow. Stayed in place real well. For the bunny ears, we cut a marshmallow longways, then cut it widthways, making 2 pairs of ears per marshmallow. Used mini choc. chips for frog pupils, pastel m&m's for bunny eyes, Twizzler red string licorice for mouths, and used cut pieces of Fruit Rollups for frog tongues and bunny noses. This will become a family favorite and tradition!

Cream Peas

These are just like the recipe I have made for years. The only reason I looked it up, is because my daughter, age 11, is putting herself together a cookbook for when she is older, and wanted to know measurments. The whole family loves these. Even the ones that are not too fond of just plain peas. I alot of times will sub 2% milk, same great taste!

Beef Barley Vegetable Soup

Awesome recipe! Very good comfort food on a winter day! Only change was added about 1/2 cup or so of lentils, and added a bit of Italian seasoning to taste.

Linguine with Clam Sauce

I made this today, and my whole family devoured it! Which was quite a surprise, because the normally are not seafood eaters, outside of fried fish and shrimp most of the time! It was a simple and very easy recipe to put together, but tastes like you spent forever on it. Only thing different I did was up the amount of garlic, but our family loves galric. Served with a side salad and grilled Texas Toast.

Cola Sauerkraut

We added in smoked sausage dogs, and eat this on toasted hotdog buns. Out of a family of 6, 4 out of 6 enjoyed it. But hey, the two that didn't think it was wonderful, was my 2 youngest, ages 10, and 12. But Mom was in the mood for kraut, and when Mom cooks, you will at least try what Mom makes! LOL ;)

Cheddar Buttermilk Biscuits

Amish Friendship Bread I

This is a great recipe! My friend gave me this recipe, along with a loaf of bread and a starter. Hers included a box of pudding, flavor of choice, and she uses 2 teaspoons cinnamon. My whole family loves it! With all the endless possibilities that can be added to this such as nuts, baking chips, fruit, some veggies like carrots or zuchini, I was always have a starter in process and/or in the freezer.

Creamy Chicken and Wild Rice Soup

Even though I tweaked the recipe a bit, (and don't we all add our own touches to recipes?) by using all chicken broth, omitted the water, and added sauteed onions, garlic, and celery, and added some mushrooms, frozen peas and carrots to make it a complete meal. My family greatly appreciated this meal on such a cold rainy January.

Perfect Baked Potato

This is the way we bake our potatoes too. The combination of the oil, salt and actual baking is what makes it a sure winner. I have in a pinch 'baked' potatoes in the microwave. But it still does not give the same texture to the fluffy insides or the baked part of the skins. On occasion we have Baked Potat Night. It is where we have large baked potatoes as a main dish along with a salad, and we have bowls of favorite toppings like butter, cheeses, sour cream, bacon, broccoli, onions, and chives to suit everyones tastes. A meal in itself.

Italian Vegetable Soup

This is a WONDERFUL soup! I threw all of it in my stockpot last night, and stuck it in the fridge. This morning I heated it to simmering, and it is near done, and the taste and smell is great! I did not fix the macaroni, and I don't think I will, and was out of ground beef, so quartered and sliced some smoked sausage. It seems to be a full bodied soup as it is. Only flaw was maybe Jackie the submitter meant 2 QUARTS of water? But no biggie, have made plenty of homemade soups, and know to adjust the liquid and or broth level to our likings, and if I up the liquid, know to adjust the seasonings and or bouillon too. This will go so well with French crusty bread. Can't wait til dinner!
