Waffle Cookies I

Reviewed: Jan. 9, 2009
Add 1 teaspoon cinnamon to the flour...will give the cookie a great taste. I put a powdered sugar glaze (1 box, thinned out with milk, 1/2 tsp. each vanilla and almond flavoring) on the cookies between baking the batches. While they're still warm... Check it out.

Orange Loaf

Reviewed: Dec. 15, 2011
Glaze tip: Poke holes with a toothpick all over the loaf before drizzling glaze on warm loaf. This will distribute the glaze into the loaf as well as on top. Wrap in foil for 24 hours (or not) to let the flavor drench the loaf.

English Muffin Loaves

Reviewed: Sep. 7, 2011
I've been making this recipe for over 20 years. I got it from Bon Appetit Breads cookbook. It was meant for baking in a microwave oven. I've always used a conventional oven. I've replaced one or 2 of the cups of flour with whole wheat...works great and adds a little more flavor. Try it! My family is crazy for this bread with or without the ww flour. You can also use some barley flour for more flavor.

English Muffin Bread

Reviewed: Mar. 31, 2011
This is the exact recipe I found in Bon Appetit Breads 20 years ago. Except mine calls for 2 Tbsp sugar. It was developed for Microwave baking. I've never nuked it, always baked it and it's always been fabulous! My whole family has this recipe so they can make their own...we love it. I make it for 2 of us and cut the loaves in half, wrap in tin foil then freeze. On the weekends...take foil off, wrap in paper towel, nuke it for 1 minute on high....ready to slice and toast!

Very tasty and moist. I didn't have a lemon, only lime and it turned out great!

Super Moist Pumpkin Bread

Reviewed: Nov. 4, 2009
Very good. Used olive oil as recommended and it did work well. Didn't use flaked coconut or roast the nuts...still was excellent.

Special Buttercream Frosting

Reviewed: Apr. 20, 2009
There were compliments on this frosting at the party I made the cake for but personally I found it greasy. I used the suggested 1/2 cup butter to 1 1/2 cups shortening. I think the only thing that saved it was the flavor. I used almond, 2 tsp. and 1/2 tsp. vanilla. I think next time I'm going to use something else. But...I tried:)

Seminary Muffins

Reviewed: Oct. 29, 2008
I really like the base recipe! But, like others, I did change it for my tastes. Used 1/2 cup brown sugar and 1/4 cup molasses and added blueberries instead of choc. chips. Also added 1/2 cup of wheat bran and used reg. oats which didn't seem to make a difference.

Harvest Pork Stew

Reviewed: Jan. 27, 2010
We loved this recipe! It's now in my personal favorites. In all fairness, I added the kitchen sink (leftovers that would compliment this dish) The butternut squash adds so much to this soup, love it, love it!

Honey Corn Bread

This was very tasty! The vanilla was very strong but interesting. Haven't figured out what seemed to be missing in this recipe, however. Anyone else feel that way?

Iced Pumpkin Cookies

Reviewed: Nov. 3, 2009
Excellent cookies! My 2 best critics (my kids) rated them for me and I agree. I used cream cheese frosting, as it is my fav. I'll try the icing next time. I did use the 1/2 cup brown sugar as recommended because it made sense for flavors' sake.

Tropical Salad with Pineapple Vinaigrette

Reviewed: Feb. 1, 2009
I'm into salads with fruit and nuts...this was a hit at the birthday dinner I made for my best friend. I liked the rice vinegar suggestion (fitting). It went well with BBQ'd butterflied leg of lamb. This is a keeper!
