Applesauce Oat Muffins

I was looking for something that I could make ahead as a quick breakfast for my husband and I before we work out at 5:30AM. I found these muffins and had to give them a try. I did make some modifications, and they were great. I made the recipe for 12 muffins and ended up making 20 muffins. 1. I used whole wheat flour 2. I used more applesauce in place of the oil. 3. I added 4T of fat free plain yogurt for texture. 4. I added Flax Meal, Wheat Germ, allspice, nutmeg and vanilla extract. 5. Before I put the batter into the cups I placed a slice of banana in the bottom and after I poured the batter I added 5 blueberries to each muffin. 6. After I finished baking I brushed lightly with margarine and dipped the top of the muffins in a cinnamon sugar mixture. This is a great base recipe, very fun to play with. The only reason I gave 4 stars is bc without the modifications these would have been really bland. As I said, great base recipe to add just about anything to. Next time I think I will add some pumpkin and walnuts. Banana nut muffins would be great, any berries, chocolate chips, apple cinnamon...possibilities are limitless really.

Pasta Primavera with Italian Turkey Sausage

This was a great recipe. I have been looking for other ways to prepare pasta bc the regular pasta with red or white sauce and chicken cutlets gets boring. This was great and the veggies made it much healthier than the way we normally serve pasta.

Quick and Easy Fish Tacos

This was great. I used the higher end breaded fish filets - more fish adn less breading. We HATE cabbage so used chopped iceberg lettuce. I didn't use tartar sauce either. We mixed salsa and mayo mixture - it was fabulous!

Babaci's Potato Pierogi

I gave it 4 stars bc if the dough would have been left at 1/4" thickness they probably would have been really tough. I rolled the dough almost paper-thin and carefully stuffed with left over mashed potatoes and shredded cheese. Served with turkey smoked sausage, peppers and onions. It was SOOO awesome. The pierogi was so tender and delicious. Very nice dough recipe, but I STRONGLY suggest rolling the dough out much thinner.

Artichoke and Sun-Dried Tomato Chicken

This was awesome! Of course I did make some adjustments...I cubed the chicken and lightly dusted with breadcrumbs. Added some garlic and onion to th oil while sauteing. I Added some riesling and chicken broth while it simmered to make it more of a sauce. Served it over penne with grated Locatelle Romano cheese. Also warmed some bread and served some of the pesto with the bread. Awesome meal.

Sausage Pasta

I gave 5 stars bc of some modifications I made. It probably would have been a little watery so I allowed it to reduce for 15 minutes and added lust a little flour to thicken the sauce. I also added some chopped roasted red peppers. I didn't have any frozen spinach, so I had to use canned. It was great! My 5 year old son ate it up and my husband (who is a pasta critic, lol) LOVED it. Next time I will use italian turkey sausage, for the fat content.

Multigrain Pancakes

Made these w/o the cornmeal, used all whole wheat flour and added some flax seed and oil. Also sub the butter/oil with applesauce. They were so good, hubby and 5yo son ate em up!

Roasted Red Potato Salad

I definitely put my own spin on this. I added the onions in during the roasting and drizzled olive oil over the potatoes. I added some cheese and ranch dressing after the potatoes were roasted and served it hot. It was delicious.

Playgroup Granola Bars

these are really good. I made a few modifications. added some flax oil and flax meal and I made these peanut butter chocolate bars by adding chopped peanuts and peanut butter then topping them with melted chocolate. Very yummy!

Sugar-Topped Applesauce Muffins

I just made these so my son and hubby would have a healthy snack versus eating whatever junk they can get their hands on. I just ate one to see how it tasted and I have to say the texture was great. Not a whole lot of flavor in the actual muffin, but the topping adds enough to make it very good. Since tomorrow is grocery day, we have NO food in the house so it was great to be able to make something with just the regular pantry staples. I used bisquick mix for the base, but I would probably make my own with whole wheat flour. I left out the oil and added a little extra applesauce. Also added 2T of Flax Meal and 1T of Flax Oil and a little Nutmeg. I'll probably play around with this one and use it as a base in the future.

Home Style Macaroni and Cheese

Great recipe, however it got 5 stars for the adjustments I made... not to sound proud or anything, but it was really good. I followed another reviewers advice and used some heavy cream, I also used 1lb box of macaroni. I combined 2C cheddar as recommended, 1C Cloby and 1C Monterey Jack. I sauteed some chopped onion in the butter before adding the flour. Then the topping: More cheese, breadcrumbs and slices of browned smoked turkey sausage. Oh, it was very good. I do, however, sugguest serving a side dish that is high in fiber :)

Maple Roast Turkey and Gravy

Great recipe! However I like to play around with things and found that a couple minor changes resulted in the best turkey I have ever eaten (my family agrees). The sweetness was a welcome change and especially great since my son and my husband both have a huge sweet tooth. I did add some brown sugar to the maple-butter glaze. Also, I had a large turkey injector left from thanksgiving and made my own injector butter mixture. I melted two sticks of butter, added 1/2C apple cider, 1/4C maple syrup and 1/4C brown sugar. heated over low-med heat until butter was melted and sugar was dissolved then injected all of the mixture into the turkey. Oh man, it was good! Oh, and for easy suffing, just buy the boxed stuff and chop up a sweet apple (i use gala) and thaw some frozen cranberries. Add the fruit to the stuffing when you prepare it, then stuff it all into the bird. So good, and very easy.
