Meatball Nirvana

I have been wanting meatballs, so today was the day! These are great and can be used for any sauce. I did not have any hot sauce, but they had the perfect heat for me with the crushed pepper. I used Tastefully Simples Italian Garlic spice in place of the Italian spices, because it was what I had. I put them directly in to my sauce which is spicy too!

Italian Seafood Portobellos

I only used 1/2 the sausage and it was still to much for my liking. These were good, but will do more cheese, less sausage next time. Big hit.

Turkey Wild Rice Soup II

I lost my wild rice soup recipe and this very close! Love it. I did add less turkey only 1 cup. The flavors are great! I did not have trouble adding the flour, you have to just keep whisking and not on high heat. I also used a little less rice I had cooked the whole 4oz box and just added as I thought was right. Thank you so much the one I had added diced ham and chicken. I will try that next time with your recipe too. Comfort food on a cold day!

Strawberry and Feta Salad II

I needed a salad for church dinner. I almost had everything for this one. I used spring mix/spinach, instead of dried crandberries, used dried blueberries, used diced granny smith instead of dried apples and slivered almonds..had light raspberry vinagrette..it was a hit!! Thanks so much! will make again... may try pecans...

Baked Potato Skins

Crispy Oven-Fried Fish Fillets

This is a good recipe, but need to add some seasoning to the flour. Make sure to shake off the access flour. I think I drizzle with garlic butter next time. Thanks!

Creamy Macaroni and Cheese

I am sure this would have been even better with canned milk and chicken broth. I used just regular milk for all the wet ingrediants.. Easy quick and good. I can not wait to try it with the regular ingredients. My son says no mustard next time, he likes it says that is all he can taste.. haha.. he must have a strong pallette today.

Oven Fresh Seasoned Potato Wedges

These are really good. I took them out at 20 min,because they were going to get done before my chicken. I put them back in the oven and finished them off the last 15min with my chicken after I flipped them. Just a little longer than called for, but I wanted some crisp. Great wedges!

Fluffy French Toast

This turned out great for our crowd. I did have 3 extra egg yolks from the cake I baked the night before, so I added those and some half and half to use up the ingredients. Thanks! We did a whole loaf french bread.

Sugar Cream Pie I

Do not put the sugar and constarch in the pot that is hot first.. LOL. It tastes good right now, but its cooling. I did not do the topping part under the broiler. thanks you so much.

Soft Breadsticks

My son put these together tonight to go with our pizza. We made 8 sticks, they were very good. We need to either reduce temp or cook time so they are a little softer. Plus just getting used to this oven. :) We also used bread flour it was what I had onhand.

Banana Oatmeal Bread

This is really good. I did not have raisins or shortening. I used melted butter and it did not look like to me it needed the milk so I left it out. I had four bananas, so I did not measure just smashed. My house smells wonderful and this tastes great!

Speedy Blueberry Refrigerator Jam

I love the concept, thanks! I did not have lemon I used unflavored knox and only did 2 cups berries with 1/2 cup sugar and I ran my berries through the mini chopper first. I just had a great piece of toast with jam.. YEA!! Thanks saves me on spending $4 on the jar at the store that I love.

Hudson's Baked Tilapia with Dill Sauce

This is so easy and tasty. I had McCormicks cajun seasoning. I just sprinkled on both sides. I did not add salt or pepper, sliced up lemons on topped and baked. I did try to mix up dill sauce and realized I did not have any dill, so I chopped a little onion finely and added some parsley. It went nicely with the fix, but looking forward to using the dill next time. This was not to hot for me, but I like spicy food. UPDATE: makes a great wrap for lunch the next day.. yum!!

Artichoke Stuffed Mushrooms

If you are looking for the next appetizer to serve at your dinner party. You just found it. I took these to a dinner party and they were a huge hit. I followed as stated, only my onion was a bit small and I put 1/8 teaspoon pepper in as I did not add as I cooked the onion. The baking time is straight up. If you use the stuffing mushrooms, which I was very happy to find, but wish I had bought two packages, because I thought it said stuff 12.. haha.. my mistake. I might add that the comment by one person at the party was "these are better than any I have eaten at a restaurant".. GREAT job CC.. you made me a hit! UPDATE: For the poster below.. If you have leftovers, I just tasted.. Yummy on crackers, spread it on a bagel, stuff it in some chicken and bake. Lots to do with just the filling.

Herb Rubbed Sirloin Tip Roast

I am happier than a pig in mud with this recipe. I followed as stated. I did not even cut the salt, which I debated for personal reasons. I did use Kosher, I can see if you are using table salt you would cut it. I did cut the cayenne to 1/8, just because I did want to overpower the kid. This meat and directions came out so tender and juicey. It sliced perfectly. Always remember meat should be at almost room temp before putting oven or grilling. Do not put cold meat directly in oven or grill. Huge difference. Joel if you were close by I would kiss you! Thanks a million!
