Chicken Pot Pie Soup

Reviewed: Jan. 22, 2013
Great flavor. I placed all ingredients into a crockpot (browned chicken in a skillet) and let it cook for 5 hours. Next time, I may add some onions and mushrooms. I did lighten it by using 98% fat free cream of chicken soup.

Awesome recipe with a couple of additions: 1 shallot and 2 handfuls of chopped pecans. Definitely a keeper!

Slow Cooker Pork Cacciatore

Reviewed: Aug. 1, 2010
Very good, but way too much sauce. Next time I will use half a can of diced tomatoes and half a jar of spaghetti sauce.

Irish Potato Casserole

Reviewed: Jul. 25, 2010
Was fairly bland (but I guess that fits with Irish Potatoes). Next time I will add some garlic and some more onion. I did use 6 CUPS of potatoes and then 1/3 cup of butter.

Very good! Had some extra bread crumbs & sauce though. Also, the bf said that they Dijon mustard taste was a little strong.

Scott Ure's Clams And Garlic

Reviewed: Jul. 23, 2010
This was extremely good, but the juice was EXTREMELY SALTY! I'm not sure if the saltyness was from the clams themselves (as I only added maybe 1 tablespoon of butter to them, no extra salt). But the clams themselves were amazing!

Zucchini Patties

Reviewed: Jul. 21, 2010
I made a couple adjustments. I salted the grated zucchini first and let it sit in a strainer to draw out the excess moisture. Then I patted it dry with paper towels. I also added some chopped garlic.

Strawberry Cobbler I

Reviewed: Jun. 14, 2010
Good recipe, although the name is somewhat misleading. I would call this more a modified strawberry shortcake than a cobbler. I did use lemon juice (1/4 cup) instead of water in this recipe.

Missy's Candied Walnut Gorgonzola Salad

Reviewed: Jun. 14, 2010
This salad had a nice variety of different flavors, but I did make several changes. I added 2 strips of crispy bacon, substituted Italian dressing for the raspberry vinaigrette, oil & vinegar, and low fat feta cheese instead of Gorgonzola. The candied walnuts are definitely addicting! My boyfriend even enjoyed this salad, which is rare for him :)

Extremely moist chicken! Did have a couple of handfuls of breading left over. Will make again!

Roasted Asparagus and Garlic

Reviewed: May 11, 2010
Would have been 5 stars had I not overcooked it. While I did cut the serving sizes down to 4 instead of the original 6, I still think that you don't need to cook it for 20 minutes...maybe 15 at most.

Coconut Rice

Reviewed: May 11, 2010
Definitely different and sweet. I added some shredded coconut and definitely added more water as I cooked it (otherwise it was too thick).

Slow-Cooker Chicken Tortilla Soup

Reviewed: Mar. 31, 2010
Great soup! Just the right amount of spice for me. I used hot enchilata sauce and omitted the can of green chilies. Don't mess with cooking the chicken ahead of time and shredding it. I did this about a half hour before I served it.

Albondigas

Changes for next time: don't use the HOT salsa, add more water if added rice, and only use 1 lb of meat.

Restaurant Style Lasagna

Reviewed: Mar. 24, 2010
Great recipe! Next time I will change the following though: 1) use half the suggested ricotta cheese, 2) increase the meat to 1 lb (I used italian sausage and it turned out really well), and 3) increase the amount of tomato sauce. I also added some garlic, parsley, and Mrs Dash to the cheese mix. Also add 2 cans of mushrooms.

Smoked Salmon Pesto Pasta

Reviewed: Feb. 21, 2010
This was a good recipe. The combination of pesto and tomatoes will turn the sauce brown. So if you want to add tomatoes, make sure to do it at the VERY LAST MINUTE. I didn't add tomato paste and I added some asparagus (which added some color).

Bacon Chicken and Dumplings

Reviewed: Dec. 15, 2009
This was a great recipe! The only thing I did differently was that I used 1% milk instead of half & half and I tripled the amount of bacon (lower sodium. I also did not have poultry seasoning so I substituted Mrs. Dash.

Shrimp and Feta Cheese Pasta

Reviewed: Nov. 14, 2009
I would give this about 4.5 stars. After reading some of the other reviews, I used 2 cans of diced tomatoes and 1/2 cup of white wine. I would also say to add some sea salt and black pepper. Definitely makes more than the 5 servings (more like 8 servings.
