Homemade Biscuit Mix

I scaled this down to 8 servings which made about 2 cups worth of mix but fixed it according to recipe. I was thrilled how my biscuits turned out.

Gourmet Sweet Potato Classic

I made this and only substitued milk for the heavy cream. Very delicious. I definitely prefer this over marshmallow-topped sweet potatos.

Pico de Gallo

This was SOOOO delicious! I didn't measure exactly but used the components in the making a salsa to suit my taste. I used a sweet onion instead of red because that's what I had on hand and real garlic instead of powder because that's what I prefer. I will definitely go back to this recipe.

Homemade Black Bean Veggie Burgers

I've been making this recipe for years. I love how these taste. Be careful calling them veggie burgers b/c the taste and texture very much says "bean burger." What I love the most about this recipe is how many veggies you can stack on this burger and it still remains so healthy! My favorite is avocados, tomato, lettuce, and pickles.

Chicken Satay with Homemade Peanut Sauce

This was really, really good. I loved how simple the marinade was. I did decided to add some of the dipping sauce to the chicken while it cooked. It was so juicey! Based on the reviews, I expected to have a lot of sauce so I made this with rice noodles and assembled thai lettuce wraps with lettuce, cucumber, and pickled carrots. This is definitely a keeper!

Best Chocolate Chip Cookies

These made fantastic choc chip cookies. I used bread flour and stored them in a ziplock bag and they never got hard and crispy...they stayed nice and soft.

Caramel Butter Pecan Bars

These were delicous and easy...to make. To cut is another story. I lined my pan with foil and let the bars set overnight. When I went to cut them in the morning, the chocolate and carmel made them quite gooey. Delicous to eat, difficult to present. I would recommend refrigeration for at least an hour before they're cut. I will make them again for sure since they were so easy and tasted great. Lesson learned on the cutting stage though.

Easy Lemon Bars

I can't overemphasize how easy this recipe is. More specifically, how easy this crust is. And cheap. For about $1 you have a perfect crust. I was a little concerned how thin it was, but it expanded while cooking and was great. I'm going to use this crust recipe for all sorts of bars now. A great shortbread crust is good, but with the cost of butter these days, this takes the cake! The filling was also good, although I prefer a traditional lemon bars topping over this cream cheese one.

Amazing 'Pizza' Pork Chops

I'm not a huge fan of cooking pork chops as I've made some pretty bad ones in the past. It's hard for me to get good flavor and not overdoing them. But this recipe was so easy and the pork turned out perfect. I didn't think that it tasted too pizza-y. It was more like a beautiful explosion of fresh flavor. It's definitely a keeper.

Mom's Zucchini Bread

We loved this zucchini bread. I can't say that I've tried any other recipes, but why bother? I went with the highest reviews and was not disappointed. I switched most of the oil for unsweetened applesauce without a hitch. I also cut the sugar to two cups, one each of white and brown sugar. And while I was at it, I threw in another cup or so of zucchini. The recipe is so versitile!

Lime Chicken Soft Tacos

These were very good, but nothing to go crazy over. I marinated the chicken for several hours in the mixture and then cooked it. The lime flavor came through nicely, but I think you could get a similar effect just from squirting some lime over your chicken. I will keep it in the recipe box, but I'm inclined to try some fajita marinades and add lime juice next time to really compare.

Fudge-Nut Oatmeal Bars

There's so much to be said about these bars. I had pulled the recipe and never seemed to have all the ingredients on hand at the same time. But the wait was well worth it! These are to die for. To accomodate what I had in my kitchen, I made a tray in a 9x13 pan as well as put the leftover in a loaf pan. I opted to just have a layer of cookie with a layer of fudge on top...it was easier. I left out the nuts for taste. We let them cool until we couldn't bear it anymore and dug into them. However, they were more awesome the next day, so hold off if you can.

Cinnamon-Sugar Popcorn

I had been searching and searching for a cinnamon sugar popcorn recipe that works and this is it. We drizzled the popcorn after it had baked with some melted white chocolate. My husband loved it. I thought it was perfection without. Either way, this is a winner.

Clone of a Cinnabon

This is so cliche but I would give this 10 stars if I could. I honestly didn't believe it would be good enough. I love Cinnabon. They just are that good. I made all 12 cinnamon buns in one 9x13 pan. Then I froze 6 of them, two at a time in storage containers. They were fabulous that morning of course. But what I was really surprised at was how good they were when we heated the frozen ones. They tasted more like the real thing than the fresh ones! So taste alone make these fabulous. They also were easier to make than I thought. I mixed them in my bread machine and then rolled the dough out and shaped them the night before. After taking them out to come to room temperature in the morning, the rose and baked beautifully in the oven.

White Bread For The Bread Machine

I had been searching for the best bread machine recipe and have found this to be our favorite. It's easy (I've practically memorized it) and easily customized. I prefer to make the dough in the machine and bake it in the oven (350 for 25 minutes in my stone loaf pan). I like a wheat bread, so I substitute 1 c. whole wheat flour. Also, this recipe takes all purpose flour well, so if I need to stretch my bread flour, I do that. I've tried white sugar and brown sugar. It's a great recipe.
