Fried Plantains

Nice recipe. Though, when I fry plantains, I preffer to use some that are not that ripe, when the skin has a bright yellow color without any black spots, because when plantains in this stage are fried, they absorb a lot less oil, and still are sweet. Give a try to my hint, you won't regret...

Chewy Coconut Cookies

I just made the cookies, they are delicious. I had sweet grated coconut, so, i reduced the amount of sugar, anyway I don't like sweet things too much. My family loved them, and my house is steel smelling loike baked coockies....

Crepes

What a nice recipe, I've never done crepes, but whit this recipe I did fine. I used half of everything because it was my first time, but the next I'll use twice :-)

Eggplant and Pepper Parmesan Sandwiches

This is a great recipe, a different option for yummy sandwiches, but if you want to make it trully vegetarian, you can substitute the goat chesse for soft tofu.

Quinoa Pudding

I had some quinoa that didn't know how to prepare, then found this recipe and tryed it, it turnd out to be yummy. However I introduced some changes, as I don't like bananas that much, used some powdered soy milk that added to the whole milk to give it the thickness, and also added an egg yolk 3 minuts before ending the cookin process, as well as some raisins. It was great. I prefferred to serve it cool. I'll try to post a picture, so you can see the results.

Oatmeal Pancakes II

I've wanted an oatmeal pankcake recipe for a long time, then I found this, tried it, and it resulted to be delicious. Any way, as I allways do, didn't follow the recipe exactly, instead, I intriduced my own variations, so it fits to my taste. As I preffer fluffy pancakes I used teaspoon and a half ofa baking powder, and as I like the salty-sweet flavor on my pancakes, I used a bit more salt. Anyway I thought It was very nice and tasty; didn't put anything on top, but I believe some jam will be a good match. Thanks
