Oven Roasted Red Potatoes

I usually take the time to read through previous reviews and incorporate hints from other cooks, but tonight I just needed a quick recipe and made it as written. I found the soup mix to be very over-powering for the potatoes (note I love the soup mix for roasts and mixed with sour cream for chip dip, so it's not as though this was my first encounter with it), and the potatoes were overcooked as well. Next time I'll just sprinkle them with kosher salt and a little garlic powder after the oil and call it a day.

Soft Christmas Cookies

I love frosted cookies, and have spent the better part of the last 15 years searching for the perfect recipe. Friends, my search is over. I cut the flour down to 3 cups, baked them for 10 minutes exactly (in which time they did not brown AT ALL... in fact my mom saw them cooling and thought they hadn't even been cooked yet!), and they came out PERFECT. Soft and chewy and flavorful. One batch made about 48 cookies as the recipe suggests, but the cutters I used are pretty small.... maybe 1.5 x 2.5". For bigger cookies you may want to double the recipe.

Sugar Cookie Icing

Ok. There is no way that you can stir 1 c of confectioners sugar with 2 t of milk "until smooth". That's just not enough liquid. I tried this twice, exactly as written, and it was a disaster both times. The first time I thought I misread something. Nope. Ended up just mixing powdered sugar with enough milk to make it the consistancy I wanted, and then added cream of tartar about a 1/4 t. at a time until there was enough to cut the sweet taste of the sugar. An old standby recipe from grandma that saved the day again!

Sugar Snap Peas

This is the first time I've ever tried sugar snap peas at home, and both my husband and I loved it. I omitted the thyme just because of personal preference, but it was still super yummy!

Lemon Poppy Seed Dessert Cake

I made this recently for my grandmother's birthday. The cake was AMAZING and got rave reviews from everyone. Someone even thought I had bought it at the go-to bakery in town... it was just that good! I did cut the poppyseed down to 1/3 c., but otherwise made as directed. I'll definitely revisit this recipe many times in the future!
