Pumpkin Ginger Cupcakes

These were delicious! I followed the recipe exactly, only I used candied ginger instead of crystallized ginger (the ginger pieces in the cakes were my favorite part!). I topped it with Chai Tea Buttercream frosting (basically added some instant Chia Tea Latte mix from Trader Joes into the “Special Buttercream Frosting” recipe from this site). One of my friends said they were about the best cupcakes he’s ever had.

Special Buttercream Frosting

This was a great recipe! I used half butter and half shortening and added some instant Chia Tea mix to make chia tea buttercream! Excellent! I always find its much better the next day, for some reason the sugar seems to blend in more so its not grainy, so I always make and frost the cake/cupcakes the day before I need them.

Creamy Cilantro Chicken with a Kick

I made a version almost the same as thins… I usually use 1 jalapeno instead of 2 Serrano peppers and only ½ tbsp of sugar. I dice up chicken breasts and after marinating, put them on skewers and BBQ them over medium heat for about 5 min per side (I save a little of the marinade and baste them once when I turn them over). They are delicious! I usually use low fat coconut milk so it’s a really healthy recipe too!

Mini Meatloaves

these were delicious! I added some dried onions and pepper (and let it sit for about 10 mix after mixing together all the ingredients) but otherwise followed the recipe. The only problem was the portion size, I doubled the recipe but it barely fed 10 normal people!

Alfredo Sauce

This is amazing and so simple. I always buy a block of parmesan cheese and grate it myself and have absolutly no problem with it melting (in the past I have had problems w/ the pre-shredded cheese from a bag, & kraft grated cheese doesnt work at all). I usually add broccoli and chicken for a complete meal. So so yummy... Ill have to try it with milk with flour or cornstarch next time for a healthier option.

Shrimp Lemon Pepper Linguini

This was delicious! I cut the butter in half to be a bit more health conscience and I dont think I would even taste the difference with full butter. I did pepper to taste (prob ~1.5 tsp) and omitted the parsley (personal preference). Next time I would add add more shrimp! Definitely a keeper!

Chicken With Mushrooms

This was delicious and soo easy. The only thing I did differently was add a can of Cream of Mushroom soup so the sauce was thicker. I did not saute the mushrooms because I was lazy and it still turned out great! I served it over white rice with a side of broccoli. Will make again!

Chicken Milano

This was really good and relativly easy even though the directions look a bit complicated. I didnt have fresh basil and it was still delicious with the dried stuff! Other than that I follwed the directions exactly and it was great! (make sure you read them all the way through before cooking because you have a couple pot/pans going at once)

World's Best Lasagna

This truly is the best lasagna. It was amazing. I probably added a bit more cheese than necessary because I didn’t measure, I just added what looked good and I love cheese. And instead of all ground beef I used half ground beef and half ground turkey to cut down a bit on the fat (although considering how much meat was in the dish it probably had minimal health effects). I used others suggestions and just soaked the noodles rather than cooking (it was SO much easier). All I have to say is that it was even better the next day!!!!

Creamy Chicken and Wild Rice Soup

Oh my! This was delicious! I love creamy soups and this didn’t disappoint! I didn’t use instant rice because I had a box of the regular rice at home, so I made that separately and omitted the water from the broth portion of the recipe (but next time I will use instant, it would be so much easier). I also cut the butter and flour in half and used non-fat half & half to make it a bit healthier (although I bet it would be very good with the full butter and cream version too). And as other reviewers suggested I sautéed some onion, mushrooms and carrots to throw in to make it a hardier soup. It was amazing! I cant wait to eat the leftovers!

Black Bean and Rice Enchiladas

This recipe was amazing. My friends and I try to get together every once in a while and cook and everyone LOVED it... we ate way more than we should have. I did use enchilada sauce instead of picante sauce (thats what we had on hand) and I put extra on the bottom of the dish and a bit over the edges of the tortillas so they werent dry where the salsa didnt hit. I also added extra cheese, but thats because we all love cheese. It would probably be just as good without it. I will definately be making this again!
