Black-Eyed Pea Gumbo
Black eyed peas are very "earthy" tasting, which overpowered this dish, for me. Not terrible, but won't be making again.

Artichoke Spinach Lasagna
This is excellent! I also add a ricotta/mozzarella layer to make it thicker.
