Coconut Jerk Chicken

This was absolutely wonderful. My husband is from the Caribbean, so I was picturing a totally different result. In actuality it is more like a Thai dish. Didn't make any changes other than leaving out the mushrooms because I didn't have them on hand and simmering the chicken a little longer. Will definitely make again.

Strawberry Refrigerator Cake

This cake is the best for summer barbecues. So refreshing and light! I've made it with vanilla, cheesecake, and white chocolate pudding mix and all are very good. Will try it with just plain cool whip next time. Easier and I think would be just as good. I recommend using frozen sweetened strawberries or adding sugar to regular frozen strawberries. I also always use white cake mix rather than the strawberry. Very good and requested often!

Cuban Ropa Vieja

This was good but I was left disappointed. Living in Miami we get used to the very best. I found there to be too much tomato and not enough salt. Definitely needs to be marinated overnight for more flavor. The search continues for the holy grail of ropa vieja recipes.

Delicious Ham and Potato Soup

This recipe was fantastic! My family is German so potato soup was somewhat of a staple growing up. However my mom wasn't a fan of creamy potato soup and I am; so I was on the hunt for the perfect recipe. This by far is it! I used bacon instead of ham because that's what I had on hand and omitted the celery because we're not fans of it. Super easy and super delicious! Thanks for such a wonderful recipe!

Cheddar Bay Biscuits

Couldn't believe how much these tasted like the real thing... which is fantastic because living in Florida where seafood is fresh and readily available we don't have much reason to go to seafood restaurant chains. :) Thank you to Tricia M for the advice on Old Bay. Had never heard of it before and that really was the magic indredient! Will 1/2 the recipe in the future. For 2 people it's a lot and leftovers aren't nearly as good.

Better Than Sex Cake II

I made this for a get together of mostly men and they couldn't stop complimenting this cake... or eating it! I used German chocolake cake mix by accident which I won't do next time. I also followed other reviewers suggestion and used the whole can of condensed milk and extra caramel topping. This will be a staple for future gatherings!

Almond-Topped Fish

This recipe was great. I used tilapia and substituted sour cream for mayo as I can't stand the stuff. I used Old Bay instead of regular season salt and didn't use as much as called for since many reviews said it was a bit salty. It turned out perfect. Even my boyfriend complimented the dish and he is hard to please!

Creamy Chicken and Wild Rice Soup

With a few minor changes this soup is outstanding! I was sooo impressed. I didn't have any dry white wine on hand so I took a risk and used burgandy instead. I was not disappointed. Cooked the chicken in burgandy and garlic which gave it great flavor. Also added a small can of mushrooms and just over 1/2 c shredded baby carrots. Added a splash more burgandy to the soup once I added the rice. Wasn't as thick as I prefer so I added a bit of corn starch and viola! It was perfect. Thanks for a great recipe!

Baked Ziti I

We tried this for the first time and it was very good. Based on recommendations I changed the layers with the sauce directly on top of the ziti. I'm glad I took the advice. I found the sauce you use really can make or break the dish. I used one with Italian sausage and will not do again next time. Another review suggested basil flavored so maybe will try that. I also found it to be too much sauce so will add more meat to compensate. In addition, I'm a big cheese person so I will add more provolone and mozzerela next time too. As others have said, the first time around gets four stars- leftovers get five... and unless you're serving a large group you will have lots!

Pasta with Pesto and Scallops

This recipe is great and very easy (and quick) to prepare. Even my boyfriend who is not a veggie or mushroom lover really enjoyed this dish. I only made a couple changes- I added a red pepper instead of green and only 10 oz. of pasta based on other reviews. It was perfect. I found the olive oil to be a little much so will cut back next time. We're big scallop fans so will also add more of those as well. Thanks for sharing. We'll definitely be making again!

Slow Cooker Beef Stroganoff I

Coming from a German-Russian family beef stroganoff has been a staple for as long as I can remember. I have a couple timeless recipes that are better- but more time consuming. I will hang on to this when I am looking for something quick- which is pretty often. It came out great with all of the changes that were suggested in previous reviews- thank you JILLYBEAN14 for putting them all together. It saved a lot of time. The only change I made was to add one can of Golden Mushroom and on of Cream of Mushroom when doubling the sauce. Serve with homemade egg noodles if you have them available... so much better than store bought!

Traditional Mashed Potatoes

My mother makes the best mashed potatoes I have ever had... but she doesn't use a recipe. So from the time I moved away from home 10 years ago I have been trying to duplicate them in vain. Until I found this recipe. I never thought it could be so easy! The only changes I made (based on a phone call to Mom) were using 3 red and 3 white potatoes instead of all russet to give them better texture and a dash of baking powder to make them fluffier- her magic ingredient. They were outstanding! Thanks for sharing this great basic recipe. I will be making them again and again.

Rosemary Pork Roast

I tried this with tenderlion and it was only ok. It came out very dry- even with reduced cooking time- and not very flavorful. The rosemary was overwhelming. Next time I will make a few modifications. First, this recipe seems better suited to a roast. I will mix it with the oil, garlic, and fresh rosemary (instead of dried) to marinate overnight before cooking. To try to keep it moist I will try it in my slow cooker. With those changes I'm hoping to have much better results next time.

Vegetable Fried Rice

This was so easy to make. We really enjoyed it, but next time will omit the brown sugar as it came out a little too sweet for my taste. I may also add peanuts or water chestnuts to change things up a bit.

Orzo with Parmesan and Basil

This was outstanding! I didn't have any shreaded parmesan or fresh basil on hand so I used a white cheddar and a little more dried basil instead. It turned out great. This is one of those sides that goes with just about anything. My boyfriend loved it and he is tough to impress! Will definitely make again.

Awesome Baked Sea Scallops

We tried this for the first time the other night and will definitely be making again. It was absolutely outstanding! After reading other reviews I decided to use Italian bread crumbs instead of plain. I think it added a lot to the dish, but would also be good plain- just depends on the flavor you're looking for. Next time I will only use 3-4 Tbsp butter and only 1/2 cup bread crumbs. Also make sure you allow the scallops to rest in the butter mixture 5-10 minutes. It gives them more time to absorb everything. We served it with Orzo with Parmesan and Basil from this website and fresh cut green beans. Yum!

I made this recipe for the first time last night. It was great! My only recommendation is to either precook the bacon or be sure to cook it on a grill- otherwise the bacon doesn't come out crisp.
