Cheddar Ranch Dip

I make this often but use about 2 oz of bacon bits instead of the whole package. Super easy dip!

Carrot Cake III

I followed the recipe for the cake exactly as written. This carrot cake was so good and moist. I used the cream cheese II frosting recipe on allrecipes. I used a 9x13 pan, and the middle of my cake did fall, but that's okay because I just filled in more frosting to even it out. :) I will definitely be making this again.

Oven Scrambled Eggs

These were very good! I used 12 eggs and adjusted the recipe accordingly. I had to bake them for about 40 minutes total in my glass 9x13 pan, and I stirred them four times throughout. I also added 1 cup of shredded cheddar cheese about 15 minutes into baking. I used skim milk in my batch, and also added garlic powder. Just before eating, I sprinkled my dish with a little more shredded cheese and a few dashes of hot sauce. I will make these again.

Chocolate Chocolate Chip Cookies III

Okay, so I messed up on the recipe and put the powdered sugar in the dough before noticing that the cookies should have been rolled in it, but they turned out fabulous! I didn't roll them in sugar since I would be afraid they might turn out too sweet after all. Next time I make them (and there will be a next time...yum), I will make them the same way. These are so good. My kids said they taste like a mix between a chocolate chip cookie and a brownie - two of my favorite things. So glad I stumbled across this recipe. I was looking for a cookie that didn't require baking soda becasue I didn't have any on hand.

Southern Pulled Pork

Phenomenal! Made with two 2 lb pork roasts, but kept the other seasoning measurements just about the same. We topped ours with bbq sauce and coleslaw. Tasted just like the pulled pork sandwiches we used to eat from a mom and pop bbq restaurant we used to visit in Southern Illinois when I was a kid. This will be made again and again in our home.

Christmas Breakfast Sausage Casserole

Yum! This is a great dish to cook for overnight guests. I used a 9x13 foil pan and lined the bottom with white bread slices (crust removed). I also used 6 eggs instead of 4 and only used 1.5 cups of milk. As the sausage was browning I added some chopped onion. I put it together the night before, then cooked it for 45 minutes at 350 degrees in the morning. I think it would be good with hot sausage as well.

Calico Bean Casserole

I browned the ground beef and fried the bacon until crisp, then threw everything in the crockpot on high for 5 hours...perfect!

Best Ever Popcorn Balls

These were very, very good. I was trying to find a recipe similar to some we tried at a Halloween party last weekend. These tasted pretty close. I used 3 bags of light butter microwave popcorn and was able to get 20 popcorn balls. I will use this recipe again.
