Honey Mustard Grilled Chicken

Awesome and so easy to make (though not clean)! The sauce as listed tasted a little too sweet to me (could be because I used Dijonnaise instead of dijon and mayo) so I used extra dijonnaise, more steak sauce, a little pepper, and some Worcestershire. So simple and very tasty, except that our electric grill is almost impossible to clean - keep that in mind.

Chicken in a Pot

Awesome! So easy and very tasty. I made it with brown rice and a salad, serving the chicken and sauce over the rice. Made extra sauce - used 1.25 C chicken broth, entire 6oz. can tomato paste, 2 cloves garlic, at least 1 t oregano, a big pinch of salt, and a lot of ground pepper (this made it a bit spicy, which was great!). I also used matzah meal instead of bread crumbs because it's what I had on hand. It's a keeper!

Southwestern Egg Casserole

Very good! I used what I had on hand - diced green pepper and a little cayenne in place of the cans of chilies. I also used half cheddar cheeses and half low-fat mozzarella since I couldn't find kosher Monterey Jack. Cut the butter in half and used 8 eggs + 4 whites

Pollo Bianco

Probably good IF you add a lot of seasoning - pepper, garlic powder, paprika, Lawry's. Chicken came out dry but this was so easy that I can't really complain too much. Made with Yukon Gold potatoes, scrubbed (skins on) quartered, tossed with olive oil, garlic powder, a little paprika, and Lawry's.

Basic Corn Muffins

I made these exactly as the recipe stated (substituting soy milk for regular milk) and they turned out well. Not the best cornbread I've ever had, but good and they were quick - 15 minutes in the oven was enough (checked with a toothpick). I plan to make these again.

Slow Cooker Turkey Breast

Followed directions but this turned out a little dry for me. However I used a 3-ish lb. turkey breast, and it cooked for almost 11 hours - next time I need to decrease that. I put white wine and some water in the bottom, along with a few quartered red potatoes and quartered small yellow onions. The best parts were those onions and potatoes! Made gravy with what was left in the bottom by adding cornstarch and heating in a pot on the stove. Next time I want to figure out a way to put some garlic in the dish - maybe put a head in the bottom with the potatoes and onions? Overall, a recipe that I will use again.

Chicken Marsala

GREAT! Abe loved it (I did too) and it was sooooo easy! I bought the pre-sliced and cleaned mushrooms. Pounding the chicken took a little time but it was good stress relief ;-). I used 3/4C. Merlot wine (couldn't find kosher marsala wine or sherry). I skipped the salt in the beginning and lightly salted once they were almost done (after the fire was off and they were covered, waiting to be served) since kosher chicken is usually pretty salty already. Served with linguine, salad, eggplant dip, and hummus. Dessert was blondies and grapes. YUM!!!

Asparagus Frittata

Didn't use the parmesan. This turned out well though I had to cook it on the stove in my dutch oven which didn't fit in the broiler. I had to transfer it to a plate, then re-transfer (so the less-cooked side would be next to the fire) to a cake pan. I used extra vegetables than called for (e.g. mushrooms) then used more egg substitute. Need the big carton of the egg substitute!

Joey's Peanut Butter Cookies

Good! I made them like the recipe says and they turned out very tasty. They were even fine for me to roll between my hands into balls (without using water). Apparently my friend Brittany's fiance Matt loves peanut butter cookies and these were no exception!

Bread Machine Challah II

Very tasty. Makes a good amount of challah - 4 people ate less than one of the two loaves with lunch. After reading other reviews, I used more bread flour than the recipe called for. I made my 4 cups heaping then added a little more (so probably approx 4.5 cups total). I would use more yeast next time - maybe 2 3/4 t. or 1T? Other than that, awesome.

Simple Turkey Chili

So easy and good. I browned the turkey and onion and garlic like it said, then put everything in the slow cooker for a few hours. Great and so easy! Hardly requires any ingredients either

Chicken Tortilla Soup V

So easy, so quick, so good! I made this for dinner Friday night and it was awesome, partly because it is a soup with lots of good stuff in it. In addition to what the recipe says, I added a can of black beans (rinsed and drained), a little more broth than called for, and some chopped up red bell pepper. I didn't use the cheese (obviously). After it had been simmering for about 20 minutes, I took the chicken out and cut it into little pieces and put it back in for another few minutes. I used medium salsa. YUM

Best Chocolate Chip Cookies

Great cookies, Abe even says what the recipe says - that they're crunchy on the outside, but then melt in your mouth. That was after making them with margarine! Definitely a keeper.

Chocolate Surprise Cupcakes

Made this, but cheated and used Betty Crocker Milk Chocolate cake mix for the chocolate cake part. Next time I might use a slightly darker chocolate cake mix, but even as they were, these were absolutely delicious! I called them "New Year's Eve Cupcakes," sprinkled a little powdered sugar on top, and voila! Perfection!

Spinach and Potato Frittata

Very good. Made it for "breakfast for dinner" but it could have been dinner in its own right. I seasoned the potatoes with garlic powder, salt, pepper, and Lawry's seasoned salt before I cooked them. In addition to what the recipe calls for, I added 1 diced tomato and fresh basil. Had mushrooms but forgot to put them in. Would have been better with the mushrooms because I think I used too much basil. Used 4 eggs + 3 egg whites so the eggs took longer to cook than the recipe said. Next time I hope to have a bigger pot/pan to make it in so it's larger and thinner. Abe loved it, I liked it (would have liked it better with less basil). I would definitely make it again.

Flatlander Chili

Made a half recipe and it was awesome! I used an entire can of red beans, and I didn't have the tomato sauce on hand so I used extra tomato juice and a can of diced tomatoes instead. I used more green pepper and celery than the recipe listed for extra flavor. Cooked most of the day (probably 6 hours or so). Every once in awhile I tasted it and added salt, ground black pepper, or Lawry's seasoned salt if it tasted like it needed it. GREAT!

Chicken Milano

Very good and very easy! Seasoned with a little oregano. Put sliced mushrooms in at same point as the sundried tomatoes. Used nondairy pareve creamer instead of heavy cream.

Chicken Vegetable Stew

This was fine but not great once I doctored it up a bit. I did what someone else suggested and added more water and some flour to make it more like a stew. I also added a can of chicken broth. I used all the spices recommended, plus some extra turmeric, garlic powder, and a bit of Lawry's seasoned salt.

Brooklyn Girl's Penne Arrabiata

Great! I followed other reviewers' suggestions and used only one egg and one cup of breadcrumbs, and that was more than enough. I couldn't find canned diced tomatoes with garlic and olive oil so I used canned diced tomatoes with oregano, basil, and garlic. I also added a little oregano to the sauce to give it a little more Italian flavor. Definitely a little spicy, but my boyfriend loved it and I was able to handle the heat. Made for great leftovers, too! This took me well over an hour to make, but it was worth it. I will definitely be making this again!
