Spanish Rice II

Really really good. Too spicy for hubby but perfect to my liking. I will only add one tsp chili pdr next time. I also added: 1/2 tsp cumin, 1 tsp parsley, garlic, green onion and skipped the bell pepper (didn't have one on hand).

Spinach and Sun-Dried Tomato Pasta

Yummy. Added chicken, doubled peppers, used sundried tomatoes soaked in oil and herbs, added 1 oz of milk mixed w/ cornstarch, used spiral pasta and the oil from the sundried tomatoes.

Famous Butter Chicken

Easy OREO Truffles

Delish, back breaking though:) Takes forever to make, but worth it. I used melted chocolate chips for some of them and Wiltons melting discs for others, in addition to the baking squares. My favs were the wilton chocolate discs because they harden.

Slow-Cooked Chili

Cheesecake Supreme

I've made this a couple of times, the first couple times it was creamy on the inside stiff on the outside. The last time I made it I cooked it for 3hrs10min on 200F and it was way to mushy. I'm sure I'll try again:) Maybe cook closer to 4 hours?

Great! I used yellow peppers and a buttermilk ranch packet instead. I also mixed EVERYTHING together in the cream cheese, so much easier to spread and roll. It filled 10 taco size tortillas. It made so many we had left overs the next day and they were still good.

Zesty Slow Cooker Chicken Barbecue

AMAZING! Followed as directed and it was fall apart delish! I added minced garlic and onion, that's the only change I made, oh and I made the Italian dressing from a packet (which turned out oily and I had to spoon off oil when the dish was done cooking).

Broccoli Cheese Soup

Halfed it, kept the broccoli and cheese the same used 1/2c milk and 1/2c heavy cream and didn't use any water. YUMMY, I'LL DEFINATELY MAKE AGAIN VERY SOON. Made again using fresh broccoli fat free half and half and 32 oz of water w/ 4 heaping tsp of ckn broth granules. Wasn't as thick as last time though but still REALLY GOOD. I'll try adding potatoes next time. I won't use frozen broccoli again

Slow Cooker Chicken Stroganoff

WOW! This is awesome! My hubby went back for seconds AND ate leftovers! I added some chicken broth seasoning to give it a tad more flavor. Also only used two chicken breasts, butterflied and then cubed.

Sand Art Brownies

These are RICH! They are the best brownies I've ever had! Very rich, cut them up small. I made them for Christmas gifts and kept one jar for me:) Made them up about 3 months later and the sugars were kinda hard but they still turned out wonderful. I tasted them right after being assembled in December and they were very fresh tasting.

St. Louis Toasted Ravioli

I thought these tasted great. I added a little ground beef to the sauce. Next time I will use less ravioli or more egg mixture cause it didn't seem to coat the Ravioli well enough to get them totally breaded. I also used a fry daddy and cooked them for about 2 1/2 minutes.

Irish Chicken and Dumplings

VERY good! Leftovers were just as good if not better! I might try in the slow cooker next time. I did have to boil the potatoes and carrots to get them cooked which I think took away some flavor from the dish. I added 3 cans of cream of chicken and used some chicken broth seasoning to boost the flav.

Stuffed and Wrapped Chicken Breast

Awesome! We really loved this. Here are the changes I made: 2 chicken breast cut in half lengthwise to make thinner 4 slices bacon 1/4 t onion powder 1/2 t garlic powder 1/2 t salt 1/4 t pepper I kept the cream cheese and bell pepper the same. ****I have made this every week for dinner for the past 2 months and there are NEVER left overs! I even started making more so my husband can take it to lunch the next day.
