Corn and Black Bean Salad

This was good, but I think it needs some changes to be great. Next time I will use 1/2 the amount of balsamic vinegar, add red onions, and decrease the sugar by 1/2. Would also be good with bell peppers.

Lemon Pasta Sauce

This was AWESOME! Naturally I made a few changes based on what I had on hand...I used low fat milk instead of cream...I made a roux to thicken (melted the butter, then added 4T flour, cooked few minutes, then added milk,etc) I used chicken broth instead of beef. This was so easy and quick to make, so I recommend starting your noodles first, I forgot and the sauce was cold by the time the noodles were done. I thought the lemon taste was great, very light, would be good with more lemon juice too! This would go great with seafood and chicken! Thanks for the recipe! This is the best sauce from scratch I've ever made! Can't wait to make it again!

This was just okay. I was actually a bit disappointed because it sounded so good. Just seemed like it was missing something... and I added cilantro and lime juice. I probably won't make it again.

Best Brownies

These were pretty good, boyfriend said they were "awesome, better than from a box". They are in between cakey and fudgy.... I think I prefer mine more fudgy than this.... I might make these again... still they took care of my chocolate craving!

White Beans with Rigatoni

I thought this was a really great healthy vegetarian meal!! I used spinach instead of kale, and dried sage. Went really well with the 'Light Wheat Rolls' recipe on this site. I will make this again!! Yum!!

To Die For Blueberry Muffins

My boyfriend says these are the best blueberry muffins he's ever had! I will probably use the basic batter mix again, for this recipe and with other fruit, It was very thick and so easy to work with. I used frozen berries, and didn't have a problem, didn't thaw, just threw right in. I filled up to the top with batter, and had no problems with spilling over in the oven. Made about 8 large muffins. The topping was a bit too sweet for me, but if you like sweets, you'll like it. Thanks for the recipe!

No Bake Chocolate Oat Bars

I found this recipe because I was craving a PB/chocolate combo, but wanted something relatively simple in terms of number of ingredients and ease of making. This was soooo easy!! And very very yummy! I rated 4 out of 5 b/c although I cut down on the butter to cut out some of the fat, it was still pretty greasy. I will make these again when I need a quick treat. I might try adding more PB though, just b/c I LOVE it! Oh, I also used 1 cup of old fashioned oats b/c I wasn't reading carefully, and I didn't notice a difference. You may need to cook the oats longer than the recommended time if you do this though.

Easy Chicken Rice Casserole

Pan-Seared Chicken Breasts with Shallots

This was soooo good!!! I didn't flatten the chicken breasts, and I dredged them in a little AP flour to aid with the browning and for flavor. They were such a nice looking golden color!! I did add a little bit of cornstarch and water mixture to thicken the sauce. I will be making this again, it was so easy! I served with 'Sunday Dinner Mashed Potatoes' from this site, and a green bean/mushroom/shallot side.

Mocha Coffee

I thought this was really good! I filled my to go mug with coffee (so I probably used more than a cup of coffee, but I wasn't measuring) then I followed the rest of the recipe to the tee. I no longer have to waste money and time buying coffee in the mornings!! I will make this again! It was so easy and quick!

Simple Spinach Lasagna

This is my go to recipe for Lasagna! It is really good as it is, and altered. I've made it several times, sometime adding less spinach and mushrooms. Last time I used whole wheat noodles...really good! This is a really great basic recipe to play with.

Flourless Peanut Butter Cookies

I love how simple this recipe is and how much peanut butter flavor the cookies have. My only complaint is a cup of sugar is too sweet, so I use about 3/4 (half brown, half white). Sometimes I add a little vanilla extract, but they are still great without it.
