Cornish Game Hens with Garlic and Rosemary
Wonderful - doubled the liquids for the sauce as suggested by others, used a little lemon butter under the breast skin, cooked just two of them in a cast iron skillet. A note - the garlic cloves should be peeled, and they cook down into a sweet mild flavor. If you really like garlic, use garlic infused olive oil!

Simple BBQ Ribs
I came on line to post a ribs recipe we learned from a Californian restauranteur - saw Lloyd's recipe and tried it. Will never go back! THe chef's recipe entails many more steps, and while a different flavor, was no better. I will try to throw in a TBS or so of whole-seed pickling spice during the boiling step, however - then use Sweet Baby Ray's original. Bet that will bring the taste close, too!

Iowa Pork Steak
Excellent gravy-smothered meal! Browned in garlic-infused olive oil (big fan), set meat aside and cooked fresh sliced mushrooms and chopped onion in the pan for 5-6 minutes, added a glug of brandy (2 to 3 TBS) and set on fire. Stirred in chicken broth in place of water, soup, dry onion soup mix and Worchestershire. Added meat and covered pan with alum foil, stuck in oven for an hour and a half. Simple, tasty, comforting - and flambe!
