Chicken Fettuccini Alfredo

I decided to try this recipe after seeing several people on Recipe Buzz comment on it. After reading the reviews, I decided to make it as is, with no alterations. First, for anyone looking for a true Alfredo, this is not your recipe. But, the combination of ingredients was lovely. Some reviews said theirs came out runny and watery, but I had the opposite outcome and added a bit more half and half. The true beauty of this recipe is that it is extremely adaptable. Eliminate the chicken and throw in an assortment of veggies and it would make a wonderful primavera. Double the parmesan, eliminate the tomato and mushrooms and cheddar, and it would be a lighter version of a true Alfredo. This would work well with shrimp or scallops as well. Thanks, Emily...I will add this to our pasta rotation.

Best Ever Brisket

Slow Cooker Italian Beef for Sandwiches

This was excellent. The only changes that I made were to substitute beef broth for water, and 1.5 packets of the Italian Seasoning. I had it ready to serve opening day of football, and it was devoured. People had the option of using barbecue sauce, horseradish, or eating it French dip style...it was a big hit.

Department Store Onion Soup

This was outstanding! I didn't have white wine, so I substituted a Chianti, and I think the wine is essential to the success of the recipe. I also used a blend of swiss, mozerella and parmesan cheese. I counted on leftovers for lunch tomorrow, but even my son who doesn't usually eat onions loved this, so there isn't any left!

Cindy's Awesome Clam Chowder

I hesitate to rate this soup because I couldn't find the Leek soup and substituted Knorr's Spring Vegetable medley and don't really know how that altered the taste from the original recipe, but the result was very yummy. The vegetable medley had leeks in it, but also mushrooms and bell peppers. As a chowder goes, this one was not overly clammy and so was perfect for the crowd I was feeding because some of them don't really like clams and this was more of a potato soup than a chowder with the soup mix that I used. I think the recipe would have been equally good if I had put chicken or ham in it. Super easy, the bacon was a nice touch, and I will definitely make it again. Thanks Cindy.

Bow Ties with Sausage, Tomatoes and Cream

This was enjoyed by everyone in my family. My family likes spicy, so I added a little more pepper flakes and also a half teaspoon of Italian seasoning. It was quick and easy. I won't make it often, due to the amount of cream in it, but it is definitely a keeper!

Simple Carnitas

This was excellent. Even those in my family that don't really care for pork loved it. I couldn't get a pork shoulder or pork butt, so I used a pork loin roast. Next time, I will wait until I have the shoulder or butt, because the loin tends to get a little dry when cooking with this method. The only change I made was to throw a few cloves in with the other spices, because the carnitas that I have had before definitely had a hint of clove in them. This certainly was not a necessary addition, and I don't think it really changed the taste of the dish. Served it up with peppers and onions, guacamole and sour cream, and it got devoured. It will definitely be a keeper in my recipe box.

Chicken Fried Chicken

My kids loved this, and it was so much faster than making fried chicken for my large family. I did as suggested by some people and dipped in flour first, and I also added a bit of poultry seasoning to the cracker mixture. I made a veloute sauce with the drippings to serve with it. This was excellent.

Excellent. Don't omit the wine, even though it says optional. It is key to this hearty soup. It is also excellent if you add 1/2 pound of browned Italian Sausage to it. Yummy, my family loved it!

Crispy Rosemary Chicken and Fries

Yummy! Most of my family doesn't care for dark meat, and I couldn't get bone in chicken breasts, so I used Cornish Game hens. I did follow other suggestions and soaked the hens in brine, and otherwise followed the original directions. The hens were very moist and tender, and the "fries" came out nicely cooked and a bit crispy. Very nice and easy recipe.
