I am a newlywed (Nov 3, 2007) so I'm still learning how to cook for more than one. I enjoy trying new recipes that are relatively easy and pleasing to most everyone.

Roasted Brussels Sprouts
I HATE brussels sprouts...have my entire life, until I found this recipe. I did as another suggested and parboiled them for 2 minutes, shocked in ice water, then halved before tossing. I did add a touch of garlic powder (was out of raw garlic) and used coarse sea salt and OMG I almost ate the entire pan! (I only cooked for 25 min since I had done the parboiling)

Marinated Pork Tenderloin
Made 2 tenderloins using this recipe for 5 people...hardly ANY was leftover. Outstanding!

High Temperature Eye-of-Round Roast
If you need to eat super-lean meat, but hate how tough and bland, THIS is the recipe you've been looking for. I made this using a 2.36 lb eye of round roast and cooked it for the 7 minutes per pound stated and left it in the oven for 2.5 hours, let it rest for 20 minutes and WOW. I almost couldn't believe it! I only used the McCormick steak rub and it has plenty of flavor for me. I might try injecting with garlic next time.
