Coconut (Haupia) and Chocolate Pie

My husband and I fell in love with Ted's Bakery Haupia Pie so I was excited to find this equally yummy recipe! Changes I made: used only 2 tbsp sugar to mix with the coconut milk (I don't have much of a sweet tooth), used unsweetened almond milk in place of dairy milk (lactose intolerant), used pre-made graham cracker crust, and I didn't bother adding the whipped cream part at the end. I think it would taste just as delicious if nothing was changed.

Roasted Brussels Sprouts

My first time eating and cooking brussels sprouts and it turned great! I cut them all in half before cooking just to make it easier to cook. I cooked them for 30 minutes and some parts turned out almost burnt - but I think I liked it that way. I threw in any leftover green leaves that fell off and they turned into crispy chips in the end, which was a nice extra surprise. They were all pretty salty but that I was my own fault since I didn't account for the fact that I had less brussels sprouts than the recipe called for. I will be making this again for sure!

Spinach and Feta Pita Bake

Delicious! Very easy for a beginner like myself. Changes I made: left out mushrooms (don't like mushrooms) and sauteed garlic/spinach/leftover cooked chicken in some of oil from the sundried tomato pesto sauce before adding it to the pita. I baked one pita pizza for 12 minutes just to test it out and it was perfectly crunchy. Great recipe for those that like thin, crispy type pizzas.
