Beer Batter Fish Made Great

Made this tonight, and my whole family loved it. Only modification suggestion is coat the fish with a light dusting of egg then flour before immersing in the batter for best results.

Tropical Grilled Pork Chops

Wonderful flavour! Might not use the whole pod of cardamom next time, but in all fairness I did it a little different. Rather than using the ingredients as a marinade that gets thrown away, I just spun up everything in the Vitamix, pan seared the pork chops and then poured the sauce into the pan to simmer with some extra chopped pineapple and mango for the last 10-15 minutes... delicious!

Gumpacho (A Gumbo-Gazpacho Fusion)

Made this recipe exactly as instructed. Honestly, it was just ok for me, but hubby really liked it! I don't know that I would put it on rice again with all the potatoes in it, but the flavour overall was good without eating it on rice.

Backyard BBQ Chicken

Although it tasted fine I wasn't a huge fan of this approach. The chicken was soggy, and blacked foil full of watery BBQ sauce was kind of a pain to dish up.

AWESOME dough! Filling can obviously vary as much as you want. I now have another alternative to sandwiches to send in my kids lunches... will definitely use these every week or two to give them a break from sandwiches... after making them for supper the night before, so that I can have a few!

Hot and Sour Cabbage Soup

Everyone liked this recipe, and it was easy... with half the chicken stock it made a great "stew" over rice! I added a cup or so of diced tomatoes and left out the cayenne and bean sprouts and used just a cup of shredded cabbage instead of a whole head... the kids are not huge cabbage fans. Will definitely make again and again.

Garbanzo Bean Chocolate Cake (Gluten Free!)

This recipe is so quick and easy, and my family loved it. The kids both asked for seconds and didn't even know it was gluten free. My husband and I both liked that it is not too overly sweet.

My whole family loved this recipe, it is a keeper for our meal plan rotation. Made the sauce exactly as listed but used my own gluten free dredging mix... I always have some handy for just such a need!

The Best Ever Chicken Nuggets

Awesome! Love love loved it with less salt and some revisions to make it gluten free and did not use garlic salt, but rather sea salt and garlic powder because that is what I had, but the concept was the same.

Baked Honey Mustard Chicken

I made ours in the crock pot with a little home-made chicken broth added and tapioca to thicken it, and a little less paprika as a review suggested. My hubby and our dinner guest raved about it over and over all through the meal, and I couldn't believe the heaping seconds they both took! Served with mixed brown rice and quinoa, the sauce was wonderful on it.

Slow Cooker Homemade Beans

These beans taste wonderful! I cut the brown sugar in slightly more than half as previous reviewers suggested, and added half a beer. For the last few hours also added some extra tomato sauce to thicken it a bit more.

Island Shrimp and Rice

Made almost exactly to the recipe my husband and I loved this recipe... the only thing I did different is that I used a pre-cooked blend of brown rice and quinoa. Yummy, a keeper for us for sure.

Chilled Christmas Punch

I just made this for our church christmas banquet and everyone raved about it. One person said it was "like a Christmas gift to my taste buds"! Honestly, if there hadn't been so many awesome reviews I never would have tried this because the cinnamon and other ingredients sounded odd together to me, but wow, yummy!

Spinach Stuffed Chicken Breasts

My husband said this dish would be $40 in a restaurant! My spin on the recipe?... use fresh spinach and half sour cream and half mayo instead of all mayo. Use half to stuff chicken, and to the other half of the spinach mixture add fresh chopped tomato and red pepper. In last 15 minutes of cooking, put bed of cooked linguini in a casserole, top with other half of spinach mixture, place the chicken on top and drizzle with any drippings. Finally, top with shredded mozzarella and bake together for the last 15 - 20 minutes. Even my 4 and 5 year olds ate spinach like this!
