Southern Dill Potato Salad

Followed the recipe exactly and really missed the mustard and deviled egg style of potato salad. Just my personal taste and nothing against the recipe.

Greek Pasta Salad

I followed the recipe exactly and made the night before. I just didn't think it had enough "zip" to it, so I had to adjust a lot of the seasonings to my taste.

White Chocolate Raspberry Cheesecake

Loved this cheesecake as did my company. I doubled the crust recipe, but kept the white sugar amount the same and used a 10" springform pan. I don't like a really thick cheesecake. I warmed 6 T raspberry preserves with 2 T water to save time on the raspberry sauce. I did use the preserves with seeds and you couldn't tell they were in there. I kept the rest of the recipe the same, even the baking time. I always put a pan of hot water in the oven while baking the cheesecake to keep it moist and help prevent cracking. I also leave the door closed for a couple of hours while the cheesecake cools. Excellent taste and texture. Will make it many more times.

Roasted Vegetable Medley

Excellent Recipe - I only used Herb De Provence, garlic, a little smoked paprika and olive oil as my seasonings. I added whatever vegetables I knew my family would eat and also added red potatoes to the mix. I baked my cut up red and sweet potatoes at 400 degrees first with a little olive oil and added the rest of the veggies, seasonings, garlic, etc about 15-20 minutes before the potatoes were done. The last couple of minutes I then broiled the veggies a bit to get some crispness and browning on them. This is easier in the oven than on the grill but tastes about the same. We ate them right out of the oven and not at room temp. I didn't like them cold the next day but they were great reheated.

Chicken Pot Pie IX

I follow this recipe exactly as is for the sauce, but use a bag of frozen mixed vegetables. I also mix the sauce, vegetables and chicken together before adding it to the pie crust as I have found that it makes more than will fit in the pie crust. My family loves this meal, but unfortunately it doesn't reheat very well because of a soggy crust. This is one recipe I keep coming back to.

Banana Sour Cream Bread

I halved this recipe and it made 4 mini loaves of bread. I cannot say that this recipe is bad or I disliked it, but I didn't like the cinnamon in it and I thought it had way too much sugar. I did like the addition of sour cream as it does make it very moist. It also seemed like it took a long time to bake as most breads are baked at 350. I will go back to my tried and true banana recipe bread (not on this site) and experiment with the addition of sour cream to moisten it up.

Angel Pie

This would have gained 5 stars had the meringue not been so "gaggy" sweet. I will cut the sugar amount to 1/2 to 3/4 cup the next time I make it. I followed another reviewer and used 2 cups of heavy cream, 1/4 c. sugar and 1 tsp. vanilla as I wanted more cream for the topping. I also did add a heaping tablespoon of the cream to the lemon curd to help spread it. A very delicious dessert and one I will definitely make again.

Dry Rub for Ribs

This is an awesome rib rub. I adjusted the amount of salt to 3/4 T and the pepper to 1 T for personal taste. It marinated overnight then I added my favorite BBQ sauce, double wrapped ribs in foil and baked for 2 1/2 hours at 300 degrees. I then open up the foil packet and broiled them for a few minutes to caramelize the BBQ sauce. I have also thrown them on the grill to caramelize the BBQ sauce. I made this for company and everyone said they were amazing. One of our guests was from the south and said it rivaled the ribs down there. This will be my rib rub recipe to go to.

Chantal's New York Cheesecake

I made this exactly as the recipe stated. Did the whole hot water bath thing. The cheesecake cracked all over and completely fell apart when I took the ring off the springform pan. Don't know what happened. I am hesitant to try it again.

Chocolate Covered Strawberries

This is the only way to make chocolate covered strawberries and have them turn out perfect every time. I do buy white chocolate baking bars, put a few in a baggie, throw it in the microwave for a few seconds until melted and then decorate the chocolate covered strawberries after the chocolate has set. There is never any left.

Chicken Cordon Bleu II

This was messy to make but not difficult. The chicken itself was very bland. Next time I will definitely have to salt and pepper it. All the cheese came out and into the sauce. The sauce is the only thing that makes this chicken good.
