Slow Cooker Country-Style Spareribs

Reviewed: May 2, 2008
Loved it, did add a little extra brown sugar, and some homemade BBQ sauce. Turned out great and the meat fell right off the bone.

Stuffed Cornish Hens

Reviewed: May 7, 2011
I have to say this THE most tasteful Cornish Hen recipe I've made. I loved it along with my friends and co-workers. The juiciness of the hens was incomparable to any other recipe, mouth watering. The only changing I done was doubled the mushrooms and the cranberries. I made 6 1.5lb hens and almost used every last spoon full of the stuffing. I also used the apricot glaze as stated in other reviews. Tented the chicken the last 20 minutes of cooking and remained tented 15-20 minutes after removing from oven. I will most definitely make this recipe again. Thank you for this recipe, it is by far my favorite for baked Cornish Hens.

Easy Breakfast Bake

Reviewed: Jan. 6, 2012
I made this the other morning after if had gotten home from work. I only gave it 4/5 stars because the hash browns were like mashed potatos, but I do partially take blame for that one. I beleive its simple to make and put together though. My friends said it looked as if it were layered, which I agreed, and said its called Strata. I added 8oz of sliced mushrooms to the cooking sausage with the onions and bell pepper, about 6oz of whole fresh spinach in a layer, 1 can of cream of mushroom soup and 12oz frozen corn in a layer. Used maple sausage. I placed the hash browns on bottom, and then the spinach, sausage mix which took up some room, ham, corn then topped it with shredded Mozzarella and Parmesan cheese. Added the Cream of Mushroom Soup to the milk and eggs. Poured over the dish and let rest for about 5 minutes for the liquid to settle to the bottom. Baked for about 40 minutes on 350 degrees. The dish is really good, but I will use more eggs and garlic next time. I may layer it in a different order next time putting the hash bowns on top with the cheese. Just a thought, and may even leave it as is.

Black Bean and Corn Salad II

Reviewed: Nov. 30, 2011
I made this tonight it is one of the best bean salads I've had. I didn't have the cilantro or bell pepper so I to leave those out. Even without those two it was great and everyone raved about it. Other than omitting the two items, the recipe was followed as it says. The texture and array of flavors puts this at the top of my list. The next time I make this I'll make sure I have all ingredients.

Cabbage Rolls II

Reviewed: Nov. 1, 2011
I made these cabbage rolls using the recipe without changing anything. I also made these the other night using the recipes as a base, and adding shredded carrots. Italian Sausage rather than beef. 1/2 cup minced onion. 28oz can of crushed tomatoes, and a 28oz can of diced tomatoes with basil, garlic, and oregano. Added Louisiana Hot Sauce to the tomato mix. Cooked for about 1 hr in the oven at 350 degrees. Both recipes got remarkable comments. Everyone loved it and requested it be a regular around the house and office.

The Best Meatballs

Reviewed: May 2, 2008
I really liked the this recipe. I did use italian chorizo in place of the veal. I also used crackers in place of bread crumbs. Turned out great and have made several times since the first. Make sure not to use to much chorizo because of the flavor and the amount of oil in the chorizo.

Cajun Potato Soup

Reviewed: Nov. 6, 2013
I have to say the first time I made this I was saying it wouldn't work because it was bass ackwards. But I continued with the recipe only adding a head of chopped cabbage and putting a bag of frozen corn in close to the end. I was getting ready for card night and thought I may have to resort to another meal. I didn't, this soup turned out great and has became my new #1 replacing the Delicious Ham and Potato Soup recipe on the site. Since then I have made the soup several times and have made it the same was each time. My photo shows the corn and cabbage, Oh so good... Two thumbs up, Thanks Chris.

Bacon 'n' Egg Bundles

Reviewed: Mar. 27, 2012
Made this the other morning. Simple and I still can't understand why I didn't think of something like this. It was great, I did use the suggestions of the other reviews. I sprayed the muffin cups with non-stick spray. I used maple flavored bacon and cook it in the oven til done, but not crisp. The maple bacon gave it a good flavor without being too sweet. I assembled the bundles and cooked as directed. I then garnished with parsley and cheese on top after they all came out of the oven. Served with Potato Pancakes, milk and coffee. Great breakfast and not too bad reheated. **I think next time I will still cook the bacon in the oven but, I will use a wire roasting rack to place the bacon on so the drippings can fall to the cookie sheet so the bacon won't be swimming.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jan. 19, 2012
I gave it 5/5 stars because it just a great salad as it or with some tweaks. I did forget to put the mustard in this time, and I used walnuts only because thats what I had on hand. I cut the sugar in half, and didn't add cheese. I also added about 2 Tbsp of red wine vinegar. Turned out great friends and family loved it. A few wanted the recipe so I sent a link to them from here. Next time I think I'll add seedless grapes, kiwi, and/or other fruit with an assortment of nuts. The review using half spinach and half lettuce sounds great as well.

Delicious Ham and Potato Soup

Reviewed: May 6, 2008
This potato soup just replaced my favorite. I used large diced ham not the smaller diced. Plan on making this again but adding a little more onion and celery to it, other than that this potato soup is the best.

Crispy Potato Pancakes

Reviewed: Mar. 27, 2012
I made along with the Bacon n Egg Bundles. The pancakes had good flavor, but mine turned a grey color. I know it was my fault, I shold have washed the shredded potatos first then squeezed the water from them. The outside was crisp and inside was the soft texture I expected. I seems there was something missing, I couldn't place what it was but I plan to toss this recipe around til I find it. Great starter recipe. I did squeeze the water from the shredded potatos, and mix all ingredients together afterwards. Next I will wash the shredded potatos after I shred and squeeze. Plus it will take some starch away.

Caramel Pecan Pie

Reviewed: Jul. 1, 2011
Made this the other evening and was glad I did and so were the friends visiting. I made a few simple changes on the fly, and really wasn't sure how it was going to turn out. The end result was great, it’s a keeper. The only changes I made, I used 1/2 c milk, 1/2 cup sugar, and 2 1/2 cups pecans. I cooked it at 350 degrees for about 30-40 minutes; every oven is different so I kept a close eye on it. When it started to get brown and crusted on top I pulled it from the oven and placed it directly into the refrigerator. The center of the pie was still loose, it did set and made a great pie. Thanks Corwynn
