Colorful Spinach and Prosciutto Side

Husband loved this. I cooked the first time with sauteing the prosciutto to crisp it up and added fresh garlic while I did this. Next time I want to use fresh spinach! Thanks for the great idea!

The Best Rolled Sugar Cookies

Really yummy! made these at Christmas and got rave reviews from all my eaters! I followed some advice....2 tsp of vanilla, 1/2 c powdered sugar in the mix, refrigerated overnight, and used powdered sugar to roll them out to 1/2 inch. Only had time to "frost" with sugar sprinkles. Next time I will use some almond extract for a change. These do keep well for several days covered.

No Bake Cookies V

Make sure you get your rolling boil! Used 4 Tbsp of cocoa and 3 1/2 cups of oats. Next time I will try to put them in a 9x13 pan but it is really easy to make globs on parchment paper!

Feta Cheese and Bacon Stuffed Breasts

Yummy! We are garlic fans and this will keep the vampires away! I didn't have nice enough breast to stuff so I cut them into strips and put the bacon and feta on top and stirred it around a little. Had some rice, green beans and a salad.

SO TASTY! Used tri colored rotini and a pesto that I got from a friend. Also used some oven roasted tomatoes I had made. Great Great easy dish!

Artichoke Chicken

WOW!!! I was hoping this would be this good but it was even better than that! Hubby loved it and the kids (13 & 15) were singing its praises before they knew about the hearts. Did the chicken sauted with garlic and 1/2 mayo, 1/2 sour cream also. Then I turned on the broiler for the last 3-4 minutes, browns the top nicely for some color. I will probably double the "sauce" next time because left overs would have been nice!

Stuffed Peppers with Turkey and Vegetables

GREAT! As suggested I made a double batch and there will be enough for 3 meals. Froze the extras. Tastes even better on the second day. I also used red peppers to stuff instead of green and added yellow squash. I use a spice called Spike and it really adds. Also the grocery store had ground turkey with italian seasoning added. !!!UPDATE!!! Stopped stuffing the peppers and just chopped up some big pieces to cook up with the rest of the stuff!

Amy's way of Nanny's Goulash

Tasty and easy to make. I did cook it for 15 min more because we like our zucchini to be mushy. I did add yellow aquash and the 1 Tbsp sugar. Served it with mac and cheese.
