Zucchini Boats on the Grill

I loved it but the husband isn't so sure yet. Next time I will cook twice as long, the zucchini was still VERY firm (not what we prefer)

Tonkatsu - Asian-Style Pork Chop

Upon eating this the 2 and 3 time they didn't like it as much. My family just loved this. I doubled the milk/eggs mixture and then had plenty to double dip. Also we just needed 1 thin pork chop apiece, with the coating its plenty filling.

Poblano Chicken Enchilada Casserole

Very good, my husband and I loved it. Reminded me of Carlos O'Kellys spinach/mushroom enchladas. Not kid friendly in my house though (too green, and mushrooms too!)

VERY GOOD, I LET MY YOGURT DRAIN OVERNIGHT AND REALLY SQUEEZED MY CUCUMBER SHREDS. DOES MAKE A WHOLE LOT OF IT AND THE GARLIC IS VERY STRONG!

Stir-Fried Chicken with Tofu and Mixed Vegetables

French Dip Sandwiches

Saute onions and peppers to go on your sandwich. And I use beef broth rather than bouillon (less salty) Makes enought for sandwiches one night and roast beef and pots another! I love it!
