Bow Ties with Sausage, Tomatoes and Cream

Really liked this. I found that the sausage I got needed to have olive oil added. I also used the tip of 5 oz spinach, might try fresh next time. Oh I also used 1/2 and 1/2.

Lucy's Recuperation Food

Barbecue Ribs

UPDATE: I tried the baby backs and I think I liked the St. Louis style better. The baby backs seemed dry. These ribs are so tasty! I did do the bake them for 1 1/2 hours and marinated overnight. The only problem I had was that it took 2 hours to bake them a second time in my oven. I was afraid to grill them because I have had bad times with this in the past and considering that I had to bake them for 2 hours I was glad to let the oven do all the work. They did end up very tender. Maybe I didn't package them small enough or maybe my ribs were too thick. I will try this with baby backs sometime and see how that turns out.

Bacon Jack Chicken Sandwich

My family declared these the best chicken sandwiches ever! I will make them often. Used instant bacon and cooked chicken on my George Foreman grill. Used my oven broiler to toast the buns that I had buttered. I added sauted onion also

Tasty and easy to make. I did cook it for 15 min more because we like our zucchini to be mushy. I did add yellow aquash and the 1 Tbsp sugar. Served it with mac and cheese.

Chicken Scampi II

Very tasty and easy! Great for a fast night. I did take the recommendation of adding 1/2 c white wine, and added strips of green and red peppers and Vidalia onions. Served it with my favorite rice.... 1 1/2 cup water with two chicken boullion cubes, 1/2 cup white wine and 1/2 stick butter, 1 cup of rice. Bring liquids and butter to boil, add rice, bring back to boil and simmer for 20 min. Scampi is supposed to be buttery and a thin sauce.

Chipotle Crusted Pork Tenderloin

Great! We love tenderloins on the grill. Did the suggestion of marinating in pineapple juice and brown sugar for a few hours before rubbing. I prefer to cook my pork to 150 degrees and let it rest (covered) for 5-10 min. Also cut the chipotle to 1 1/2 Tbsp so as not to singe our lips off =)

Chicken Breasts in Caper Cream Sauce

Very tasty. I followed some advice...marinated in the lemon juice for 15 min.....deglazed the pan with white wine and doubled the sauce. Personal choice. the sauce was a little thin for me so next time I will thicken by adding some butter and flour to make a roux before adding the cream.
