Butternut Squash Risotto

I really enjoyed this recipe. I followed it almost exactly, except I used about 3 cups of broth instead of 5, after reading some of the reviews. I didn't add any salt at all and didn't think it was needed. The broth plus the cheese gave it plenty of salt! It is somewhat sweet due to the squash, but that was fine with me. It was really good! I would definitely make it again.

Jalapeno Hummus

This was really good, but it definitely needs a little salt. I didn't use canned jalapenos because we had a ton in the freezer. I just measured out the same amount and put them in the blender whole, with a little water in place of the juice, and it worked great! It was just spicy enough. My husband loves spicy stuff and I like it, but not quite as spicy as he does, and it was just the right balance so that we were both happy with it. Also, I was out of curry powder but I had some Thai red curry paste in the fridge and used that instead, but I don't think that made much difference to the recipe.

Arabic Fattoush Salad

This was very tasty. I didn't add the pita to the salad because I ended up making some hummus to go with this, so we used the pita to dip the hummus. Also, the "add to grocery list" function didn't work too well for this recipe, so I had to make a few minor substitutions, such as regular tomatoes instead of grape and white onion instead of red. Overall, I mostly followed the recipe and it turned out really well!

Caramelized Brussels Sprouts with Pistachios

These are pretty good, but it turns out 4 pounds is a LOT of Brussels sprouts! Granted there were only 2 of us eating them, but we hardly made a dent. I would say definitely more than 8 servings unless you're planning on this being the main/only dish! I would make them again but only half the recipe.

Eggplant Tomato Bake

This was delicious, although I had to change quite a few things based on what I had on hand. I did the fried eggplant pretty much as per the recipe, although it took a good bit more oil to fry all my eggplant (I did have a larger eggplant than specified, but I still think it would use more than 1 T oil. I probably used a good half cup or more in the end). I had to make my own pasta sauce, which I added kale to just for some extra nutrition, but due to having a larger amount of eggplant, my sauce wasn't quite enough. I had to use a 9x13 pan, and I did a layer of sauce, then eggplant, then the rest of the sauce, topped by a mixture of mozzerella and parmesan cheese. It was really tasty. We just ate it as-is instead of serving it over noodles, with fresh bread on the side. Yum!

Vegetarian Lime Orzo

This was ok. I thought the flavors blended well together, although I'm not personally a fan of lime or parsley much. I made it mostly because my husband loves both of those. I followed the recipe for the most part. All I did different was adding Rotel instead of regular tomatoes (by mistake, but I think I liked it that way) and using more water. One can just didn't seem like enough. I started with 2 cups and added about 1/2-1 cup more. One reviewer asked whether you are meant to start with raw or cooked orzo. You are definitely meant to start with raw, but like I said, you will probably need more water to cook it. Anyway, it was something different that got rid of the lime and parsley I had on hand already, so that was nice. We ate it as a main dish because my husband is a vegetarian, but it would probably make a good side dish as well.

Beet Pierogies

I pretty much followed the recipe exactly. These were only "eh." They really needed some sort of seasoning (salt at the very least, but even after I salted them they weren't fantastic). They may have managed a 3 star review if they weren't also a lot of trouble to make. Tip for anyone who is still planning to try them.... don't go to too much trouble to make the thinnest dough possible. I had probably 3 times as many dough rounds as I needed (I put those in the freezer to make ravioli or something with in the future), and the completed pierogies didn't hold up very well. The last 5-6 I put together were fine, but the ones that had been sitting there longer fell apart due to the moisture from the beets soaking through the dough. If you do want a really thin dough, definitely get your water boiling ahead of time and drop the pierogies in as you go instead of waiting to boil them until they're all put together.

Rockin' Good Smashed Cauliflower with Garlic

I have wanted to try smashed cauliflower for a long time now, and I'm so glad I finally did! This was really good. I used fresh cauliflower, no chives (I hate chives), and used half-and-half instead of cream (side note- sometimes the "shopping list" function doesn't work quite 100% right, LOL), but it was really really good!

Lentils And Spinach

I liked this recipe a lot. I doubled the cumin, used fresh spinach (I didn't cook it before I added it, just added it to the pot and put the lid on, and stirred it a couple times until the spinach wilted), and added a can of tomatoes at the end. I served it over smashed cauliflower, which I've never tried before, and it was absolutely delicious! I would definitely recommend that to pair this dish with! It's not a super exciting dish really, but somehow it was just REALLY good. I think there is probably a lot you can do to add/tweak this dish to make it a little different if you want, too. I definitely think the tomatoes were a good addition, and adding Rotel instead would probably be a great idea if you like a little spice.

Lentils And Spinach

I REALLY liked this dish. Although I think part of it was the smashed cauliflower I served it over. Anyway, it was delicious. I put in 2 tsp. cumin instead of 1, and added a can of tomatoes at the end, but otherwise followed the recipe pretty closely.

Cha Cha's White Chicken Chili

This is delicious. Although, as many others have mentioned, VERY spicy. I cut back a little on the spicy stuff and it's still a little too spicy for me. I chopped up 4 small jalapenos in place of the can of jalapenos, and I cut back a little on the cayenne. I think next time I might leave the cayenne out entirely or maybe use just a sprinkle. I think the jalapenos OR the cayenne would be good, but not both! However, other than that I am very happy! I served it over fritos, because that's how I first had white chili and it is soooo good that way!

Peanut Vegetable Curry Wraps

I would give this 3 stars based on taste. It was just mediocre. Not bad, just not super exciting. However, I decided to bump it up to 4 stars based on it being so easy to make. Just a little chopping of veggies, and the rest only took about 5 minutes. As some other reviewers mentioned, I chose to use zucchini in place of cauliflower. I like cauliflower, but the zucchini just seemed easier!

Vegetarian Pumpkin Spinach Chili

I wish there was a rating of negative stars. This soup was the most horrible stuff I have ever tried to eat. I was excited because it looked tasty and different. Well, it's certainly different... I literally couldn't eat it, and I will usually eat stuff that turns out badly because I'm too cheap to waste food if it's edible. This did not qualify as edible, in my opinion.

Buttermilk Strawberry Shortcake

These were delicious! I just used the biscuit recipe though. I don't like syrupy strawberries, so I just used plain sliced fresh strawberries instead. Also, I served this with whipped cream (obviously, without the syrup it would have been too dry otherwise!). The biscuit part was very good though. I didn't bother with the cream/sugar on top of the biscuits, but I'm sure it would have been even better with it!

The Best Veggie Sandwich

I should have gone with my gut after reading the mixed reviews about using ranch on this sandwich. I decided to just do the sandwich pretty much as written, but to me it just tasted like ranch dressing. There were so many other good flavors on this sandwich that were totally wasted. If I were to do it again, I would either put a tiny smear of ranch on it or leave it off entirely. It wasn't a bad sandwich, but certainly far from the "best" veggie sandwich.

Slow Cooker White Chili

This recipe was ok, but really not that great for me. Partly it was just way too salty (which I can't really figure out, since no salt was added, so it must have been the broth or the salsa I guess? I even used frozen corn instead of canned so there was no extra salt there...) Anyway, it just wasn't really what I wanted when I was expecting white chili, and it wasn't fantastic enough to make up for the fact that I was disappointed it wasn't more like regular white chili. I'll eat the leftovers, but probably won't ever make it again.

Five Minute Ice Cream

Wow, this was so good! I decided to make this because I had some cream about to go bad. Then, I forgot to make it before the cream actually did go bad, so I ended up using skim milk instead, which was all I had on hand. I can't even imagine how much better it would be with cream, because it was awesome just with the milk! I froze some fresh strawberries and used the full pound container, 1/3 c. of sugar, and 2/3 c. milk, then ended up having to add a little extra milk. Just a tip if you use fresh strawberries, don't forget to cut off the tops before you freeze them! That would have made it a lot easier...

Stir Fried Sesame Vegetables with Rice

I wasn't expecting much because this recipe seemed kind of boring, but wow, was it good! Based on other reviews, I used about half as much sesame oil at the end after it was finished cooking, but otherwise I followed the recipe pretty closely. I will definitely make this recipe again!

Cheddar Onion Drop Biscuits

Very tasty! I did do one thing slightly different. I didn't have dried minced onion so I used fresh onion, and I accidentally used 3 T because I didn't read the recipe close enough. However, they were very good so I think I'm glad I used more!
