these muffins are super yummy, i altered it a bit by using splenda brown sugar, but still real while sugar, instead of butter, 1/3 cup of olive oil, 2/3 cup of apple sauce, 2 cups whole wheat flour, 1 cup white flour, i doubled the cin, nutmeg, and ginger, i worked out the cals and with 18 muffins, they were around 240 calories with 2 grams of fiber per muffin :)

Roasted New Red Potatoes

Reviewed: Jul. 21, 2008
these potatoes were simple but good, i will keep this recipe. I took some advice and used a zip lock baggy to shake up potatoes and i added some seasoning salt and garlic to the mix. However i felt it was too much garlic and will use garlic powder next time instead.

im rating a one bcuz instead of pepper sauce i tried with Frank's flavoured hot sauce....could be the reason the sauce was awful, wayyy to vinegary, burned the back of ur throat. i threw it all away.

Olive Chicken II

Reviewed: Jul. 17, 2008
Great for something different. To eliminate some cooking time, i removed the chicken after simmering for about 15 wrapped in tin foil, and brought rest of dish to a boil for a few minutes than added corn starch on low to thicken. Turned out perfect! I also altered this recipe by adding fresh green beans with rest of ingredients & i removed them as well with chicken before boiling.

Red Potato Salad

Reviewed: Jul. 14, 2008
this was my first attempt at potato salad and it turned out excellent. I did use a tip tho that my step-dad gave me to back the potatoes first and then boil them for a few minutes. This makes the texture perfect (double baked its called). Loved the dill flavour, will make again and again.

Lemon Chicken III

Reviewed: Feb. 26, 2008
I enjoyed this recipe, it was great for something different. However, i didnt have parsley so i did feel as though it was missing something. I was also thinking Dill and maybe garlic would have added and mellowed out the very tangy strong lemon flavour.

Erica's Delicious Slow Cooker Beef Roast

Reviewed: Feb. 25, 2008
We really liked this roast. We added extra flavour to the dry rub (garlic, paprika, italian seasoning) and a cup of beef stock to the slow cooker. Lots of flavour, made a gravy out of the left over juices, it was yummy!

Grandpa's Popcorn Balls

Reviewed: Feb. 18, 2008
I cut the recipe in half and only used one bag of microwave popcorn, however the popcorn seemed to be too weighed down by the mixture and would not stay as balls. They kept collapsing and were really hard to make, very messy!!!!

Spinach Stuffed Chicken Breasts

Reviewed: Feb. 18, 2008
GREAT!!! I used fresh spinach, and miracle whip instead of mayo. Also added a chopped roma tomatoe and a tiny bit of red pepper. Coated the chicken breast with a various mix of spices (oregeno (italian blend), garlic powder, peprika, pepper, celery salt) and wrapped with 2 slices of bacon per breast. Cooked for only 30 minutes and came out absolutely delicious. Best chicken ive ever made!!
