Very good. Only 1 suggestion...be sure to use lowfat thin strips of bacon for less grease and well cooked bacon. BLOT. =)

Grilled Sausage with Potatoes and Green Beans

Reviewed: Jul. 14, 2010
this recipe is okay but there are many that are much easier and taste better. This lacked flavor....maybe I need to use a spicy sausage or jalpeno sausage next time. Needed flavor, great man food. Don't think we'll make this one again. But...its worth a try.

Fiery Fish Tacos with Crunchy Corn Salsa

Reviewed: Jul. 14, 2010
Very good and lite. The corn salsa is beautiful...so colorful and it smells great because of the cilantro. I did use whet tortillas and fat free sour cream which is possibly why I felt this recipe needed a little somthing. It is wonderful but next time I think I'll add Cajun spices and a ranch, jalapeno, cilantro dressing made in blender. A great lite dinner or lunch. I will be making this one again. Hubby liked it and he is a meat and potato kinda guy.

Chicken, Asparagus, and Mushroom Skillet

Reviewed: May 26, 2010
Pretty easy and yummy. I'm giving it a 4 because the chicken was dry...probably my own mistake. I will make thsi again...my father in law loved and my hubby said it was alright. Next time (hints) I will use a much bigger skillet so that asparagus and mushrooms aren't piled so high and have roon in the skillet. I did double the sauce but they wanted more...MMMM more wine. =) I think I'll be able to make this to my liking next attempt. USE LARGE SKILLET FOLKS!

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: May 19, 2010
Just finished making this and devouring most. Hubby loved and I did too. The red pepper flakes give this a real kick, if you love spicy food you will love this. Oh...no crushed tomatoes at home so used rotel and tomato sauce.....and this is good and easy, not time consuming at all. Nice for dinner guests too but you have to continue lifting up sauce from the bottom...just mix it right before serving.

Cathy's Creamy Chicken Bake

Reviewed: Feb. 21, 2010
Lacked flavor...was another canned soup chicken recipe with flare (swiss cheese). I was so excited to make this but I didn't care for it and when my husband who eats everything said it was "alright" I knew we wouldn't be making it again. Followed recipe exactly but doubled swiss . Preparation was simple so thats a bonus. The chicken was very moist and tender...just perfect! This recipe needs something. ???? Thanks for submitting..I may play around with this a bit. Baked at 375 for 1 hr...covered with foil minus last 15 min...chicken really is so juicy.

Cuban Picadillo

Reviewed: Feb. 6, 2010
Made this twice..this is what Ive learned. Instead of tomato sauce...Sofrioto (similar to tom sauce but has lots of herbs blended that really add to flavor) it is made by Goya can be found in the ethnic food isle (WalMart). The first time I made this I used Sofrito but the 2nd time I used tomato paste...big difference in taste. I invited my Cuban grandmother over for dinner and she said "Its good...but you need to use Sofrito and wheres the capers and bay leaf?" She uses bayleave in everything and she is a 90yr old Cuban who can cook her tail off. Next time...I will follow diections but modify it a bit using only Sofrito, 1/2 the raisins, 2oz capers and don't forget grandmas bay leaf! TIP: this tatses great but its the best 2-3 days after its made when the olives seem to really add even more flavor. I LUV IT!

Tantalizing Turkey and Blue Cheese Meatballs

Reviewed: Jan. 17, 2010
Sorry guys...I was really looking forward to this dinner but was not impressed. Followed recipe exactly for one exception, I doubled blue cheese...which I barely tasted. Also, just like many other reviewers...the mixture was to wet and I had to add additional bread crumbs as well. It was a bit bland for me. I'm glad I attempted it but we won't be making this again. =(

Garlic Prime Rib

Reviewed: Jan. 2, 2010
easy. Followed exactly and it really creates a nice crust on the top of the ham. They charge you $1 more per pound for this if you buy it already seasoned at the store. Do it yourself. Lots of compliments on this.

Shrimp Fra Diavolo

Reviewed: Dec. 23, 2009
Watch out for to much red pepper. I'm from Texas and we love spicy food but this recipe does pack some heat. I prepared it for gusests and I coud tell it was to spicy for one of them but the rest of us loved it. Maybe use half and add to it as you cook. (?) I did use fresh jumbo shrimp and cooked them til pink, adding to sauce at at the very end...don't want to eat dry shrimp...its like dry chicken. No buneo. Also...we added fresh mushrooms to the sauce and it was awesome. Didn't have the crushed tomatoes or linguini so I used tomatoe sauce and bowie pasta and it was delish!

Tarragon Mushroom Chicken

Reviewed: Dec. 23, 2009
@ I hate cooking: Due to your review I doubled chicken broth and had more than needed, which was great since we had mashed potatoes with it. I'd suggest dong that next time. ? We used frozen chicken breasts but I don't know if that makes a difference. =)

Lucky New Year's Black-Eyed Pea Stew

Reviewed: Oct. 22, 2009
I'm giving it a 5 because it was so easy and everyone in my home loved it. What a simple way to incorporate all New Years food. I don't even like cabbage but this was delcious..I barely tasted it. I used 1 lb. boneless ham steak (cubed)and canned beans. I recommend doubling the ham..I did the second time and enjoyed this recipe so much more. Here in Texas we LOVE spicy food...you can kick it up a notch if you'd like to with a little extra cayenne. Husband loves this recipe...great MAN food and heats up very well. Thank you for sharing.

Chicken and Dumplings III

Reviewed: Oct. 5, 2009
Delish! Simple. I'm giving it a 5! Seems so many people made modifications, I just took several ideas from the top 4 reviews. Boil chicken in broth...do not drain...cut and set aside. Used only cream of chicken soup and doubled amount since I added plenty of fresh organic carrots, onions and celery. Also added 1/2 cup of white wine. Add spices you like such as salt, pepper and garlic powder and a dab of butter. Cook your veggies 45 min then throw in chicken the last 10 minutes when you're doing your buscuits. prevents chicken from drying out. This is so good I'm half tempted to eat another bowl. Yum yum...this is a keep and I'm thrilled to have found it! Thank you so much for submitting this.

BBQ Pork for Sandwiches

Reviewed: Jun. 24, 2009
DA BOMB!!!!! So easy...your husband could make it. Meat is very tender and easily shreds with 2 forks. My husband raved about this one. I have made it once a week for the past month. I used a spicy honey BBQ sauce and it was delicious. Its even better the next day! Followed recipe exactly...very pleased! served with potato salad, wheat buns and sliced pickles n onions. Good stuff!

Sausage Pepper Skillet

Reviewed: Jun. 24, 2009
This is super easy and very lean. I did add some rotel as suggested by another reviewer. It not only complimented the meal...it added more color which gave it a nicer presentation. My hubby liked this too which is good since his trying to trim down. I'll make this again and would recommend it to a friend.=)Thank you!!!!

Cheesy Sliced Potatoes

Reviewed: Dec. 24, 2008
Made this Christmas Eve and it was good but could be better. I always prepare recipes exactly as suggested by submitter but I found a little room for improvement. You may want to add some butter, real bacon bits, some chopped green onions, fresh cracked pepper. I think it would add to the flavor and increase presentation appeal by adding color. I'll try it that way next time. Don't get me wrong..this recipe was good..but I think it could be better.=)

It made the house smell sooooo good upstairs and down while baking. banana bred is wonderful hot out of the oven but its even more 'banana-y" the following day. C'mon tomorrow!!!!
