Royal Coconut Cookies

This is an easy to make cookie recipe, however it is not a favorite of mine. I found it too sweet and a bit bland. Perhaps it would be better with cinnamon, nuts and/or chocolate chips. Using a 1 1/4 inch cookie scoop, I got 7 dozen cookies out of this recipe.

Irresistible Irish Soda Bread

After a previous attempt at Irish Soda Bread turned into a "hockey puck," I did not think I would ever try to make Irish Soda Bread again. However, when I read the reviews for this one, I decided to try one more time. I was not disappointed. This bread is wonderful! It is quick to make, and delicious. We had it warm shortly after it came out of the oven and it was enjoyed by all. I don't know if there will be any left to try tomorrow, when it will supposedly be even better. A definite make-again.

Irish Chicken and Dumplings

This dish is easy to prepare and tastes great. It was a bit saucy, so next time I will make less sauce. I used one extra chicken breast, but I did not shred the meat. I cut each breast half into 4 pieces. We enjoyed having hunks of chicken meat in the dish. I also used 6 potatoes instead of four. Even with these additions, the dish was very soupy. The biscuits were great. I did cook them for a total of 25 minutes, just to be sure they were fully cooked. This is definitey a make again!

Oatmeal Peanut Butter Cookies

This cookie is heavenly. Since I don't like salty cookies I made the recipe with unsalted butter and used less than a half teaspoon of salt. They came out perfect. Like others I found 15 minutes too long. On air-bake cookie trays, I found 12 minutes to be perfect.

Mexican Rice II

My family enjoyed this recipe. It is quick to make and is not too spicy. I think next time I will make it with water rather than chicken broth. I served it with Beef Enchiladas which made for a nice quick dinner.

Rice Pudding

Although I didn't make this recipe I would like to offer my comments to those who found it didn't set up. I have a similar recipe and I believe the biggest problem is the baking time. Try baking it for 1 hour or more. A knife inserted in the center should come out clean. Then you will know it is done. Also, with Rice Puddings, they will come out better with whole milk

Pork Chops for the Slow Cooker

These pork chops came out very tender, but very dry. I don't know if it was the cut I used (butterfly) or if the six hours was too long. My family did not care for these. I use a very similar sauce as a marinade for pork tenderloins which I broil or bake. I think those methods of cooking suit the pork much better. I will not make these again.

Baked Pork Chops I

The pork chops came out tender and my family said it was an okay recipe, but not a great recipe. We don't usually care for recipes made with canned soups. I think it is simply a matter of preferences.

Slow Cooker Italian Beef for Sandwiches

My family really enjoyed this recipe. I used thick sliced cube steaks, which worked out well. Next time I will try it with a rump roast. I carmelized onions and green peppers for the sandwiches, which was a nice touch. I used half the salt and instead of onion salt used onion powder. A definite make again!

Apple Pork Chops

My family enjoyed this recipe. The chops were tender and the apples were a nice touch. Next time I will poke holes in the chops and marinate the chops in the sauce for several hours. Just baking them did not flavor the meat enough for my satisfaction. I will also sprinkle some cinnamon and brown sugar directly on the apples. Definitely a keeper!

Coconut Cake IV

Coconut lovers will enjoy this easy to make, tasty, very moist cake. My family enjoyed this cake, but did comment that it was very sweet. I think I will cut the sugar to 1 1/2 cups next time I make it and eliminate one egg.

Easy Ground Beef Stroganoff

This is a tasty, quick meal. I made a few changes. I used NO salt at all and reduced the boullion cubes to four. Like someone else, I added a little sour cream before serving. This recipe was well received by my family.

Yeast Raised Christmas Waffles

This was my first attempt at waffles from scratch. They were by far the best we have had. Next time I would add a bit more sugar for my tastes, but otherwise they were wonderful: very light and fluffy!

Elbows and Ground Beef

This is a very quick and delicious recipe to throw together when time is tight. I did saute 3 large garlic cloves along with the onion. I also added fresh ground pepper to the recipe. Since I was out of green pepper, I used red pepper and celery in its place. It turned out great. I also used less tomato sauce. Some family members sprinkled it with parmesan or cheddar cheese. This recipe was a hit with my family. It is not gourmet, but a nice basic dish.

Chicken Enchiladas I

Very tasty, easy to make recipe. I did not use water and I only used an 8 ounce can of tomato sauce. I think it would be like soup if you used the ingredients as called for. I also used diced green chilies instead of green pepper, and enchilada sauce instead of taco sauce. My family loves this recipe. We make it about twice a month.

Spicy Rapid Roast Chicken

This recipe was outstanding!! The chicken was so flavorful. My whole family enjoyed the tasty meal. I used a six pound chicken, so I doubled the spices. I put an onion and celery leaves in the cavity before roasting. I cooked it at 350 degrees for about 2 hours. It was wonderful!! Quick to prepare and very delicious!!

Oven Roasted Potatoes

These potatoes were great and brought rave reviews from the guests I served them too. Next time I make them, I will first roll the potatoes in the olive oil and then sprinkle the spices on. These are quick to prepare and very tasty. They eliminate the need for making a high calorie gravy. This is a definite keeper.

Apple Crisp II

Great Recipe! I did not add the water, since I never add water to fruit crisp recipes. I mixed Granny Smith apples with Jonathan apples and the result was a delicious dessert. For those bakers who said the recipe was too sweet, I am guessing that they used eating apples and not baking apples. Rather than sprinkle the sugar, cinnaman and flour on the apples, I mixed the ingredients together and then stirred in the apples.

Pork Chops with Apples, Onions, and Sweet Potatoes

My family enjoyed this recipe a lot. Instead of sprinkling the chops with salt and pepper, I used Morton's Seasoning Salt, which is a nice blend of seasonings. I did mix cinnamon with the sugar and made a little more than what is called for. Next time I would not use the onions. My family did not think the onions blended well with the sweet potatoes and apples. I also did not season the casserole with the 2 tsp. of pepper and the 1 tsp of salt. Somehow I didn't think that would go well with the sugared potatoes and apple slices. I would suggest that if you make this recipe, you microwave the sliced sweet potatoes for a couple minutes to give them a head start in cooking. I found the potatoes were a little hard and the meat a little overdone, following the recipe. I think if you started the potatoes, you could cook this recipe for about 45 minutes and get juicier chops.

Spinach Balls

I have made these for years and they are always a big hit! These can be prepared days ahead and frozen. On the day of your party, just pull them out of the freezer and bake. I freeze them in the aluminum foil type pans, so they are ready to go right in the oven.
