Blueberry Sour Cream Coffee Cake

Made this for the first time to take to the in-laws for Thanksgiving. Everyone loved it! Very moist and flavorful. The little that was left was even better the next day. Now I make it the day before I plan to serve it. Excellent!

Cream Cheese Squares

Love, love, love this!! Quick and easy and absolutely delicious! My family prefers it exactly as written. The 3 of us will eat it in a day - large servings at breakfast, then as a snack later in the day. If there's still some left, it's eaten as a bedtime snack. It's just that good!

Chinese Broccoli Slaw

Tried this dish at a potluck, and loved it, but didn't get the recipe, so I was thrilled to find it here! The only "change" I make is to add the seasoning packet from the ramen noodles. My family requests this often, especially with other Oriental dishes, (we particularly like it with the Asian Tuna Patties, also from this site) but also with grilled meat/fish. I usually halve the recipe as there are only 3 of us, and there is rarely any left over. If there is, though, it's gone the next day.

Feta Cheese and Bacon Stuffed Breasts

Mmm-mmm-mmm! Was looking for a chicken recipe that included feta, as I had some left over from another dish. Wow! The whole family really enjoyed this, and asked that I make it again soon. I put the chicken in the marinade about an hour before I thought I was going to bake it, but something came up, and I didn't actually make it until the following night. As this was the first time I've made this dish, I don't know if the additional marinating time made any difference. I do know that the chicken was tender and juicy, and we loved the zing that the lemon juice added. I cut the olive oil to only 4 tablespoons. I had only crumbled feta, so per others' suggestions, I mixed it with the crumbled bacon, and added just a little bit of sour cream to bind it, which made it easier for me to stuff the chicken. Also, we too love bacon, so I also wrapped each breast with a slice of partially cooked bacon. Sauteed some mushrooms in a little olive oil & added fresh spinach just till wilted as a side. Plated the spinach/mushrooms over orzo and topped with the chicken - looked great and tasted even better.

Garlic Cheese Biscuits

I've been making these for years, especially when I am making a pasta dish. Although I have tweaked them a time or two, we prefer them made strictly according to the recipe. Just our personal preference. Easy and delicious.

Roasted Beets with Feta

I was looking for a "different" side dish, and my husband suggested using beets - something we've not had before. I found this recipe, and was intrigued by the ingredients and simplicity. Not really knowing what to expect, I was surprised by how good it was, and my husband loved it! Will definitely make again, although probably for an adults-only dinner, as my 15-yr-old took one taste and gave the rest to us.

Ultimate Spinach Dip

Best spinach dip I've ever made. Loved the fact that it uses fresh spinach instead of frozen, as fresh is all I ever have on hand. Made it for a small dinner party, and everyone asked for the recipe!

Asian Tuna Patties

My family loves this! It's the only way we will eat canned tuna. We love Oriental cuisine, and this recipe is quick and easy for busy nights when we want something other than the usual stir-fry. There were a couple of times that I was out of cornmeal, so I substituted breadcrumbs instead. Still comes out delicious.
