Old Fashioned Coconut Cream Pie

This recipe was wonderful! I took the advice of a few other reviewers and used 1/3 cup of cornstarch and left the flour out. I also used half coconut cream (not coconut milk!) and half heavy cream instead of the half and half. While it definitely wasn't low fat or low calorie, it was the most incredibly velvety pie I've ever had!

Whipped Cream Cream Cheese Frosting

This recipe is excellent, it's my go-to recipe for my strawberry shortcake cake! It's light and fluffy and it's the most beautiful frosting I can imagine. The only thing I noticed when reviewing it was that people are having trouble with the amount of cream used in the recipe because it makes the frosting a little thinner and less able to stand up than needed. The best way to get around that is not to reduce the amount of cream, because in my opinion that makes it less fluffy. I always make it by whipping the cream cheese, sugar, salt and vanilla for about 2 minutes with a stand mixer (with the whisk attachment) and then just adding the heavy cream to that mixture, and whipping it together until it's to your desired consistency. Works every time for me and turns into a gorgeous frosting!

BBQ Pork for Sandwiches

This made wonderful sandwiches! I used a few packages of thinly sliced pork chops, which may not be the cheapest way to go but it was certainly lower in fat since I was able to cut all the extra fat off. I cooked them on high for 4 hours and they was so tender and delicious. I would definitely recommend this to anyone. Thanks for the great recipe!

Waffles I

These waffles were delicious... I made only a few changes and they came out great. I added about 3 tablespoons of sour cream, 3 tablespoons of sugar, 1 tablespoon of vanilla and melted butter instead of the oil. Everyone loved them!

Chicken Enchiladas II

These were absolutely wonderful, definitely the best chicken enchiladas I've ever had. I only used to eat cheese and beef enchiladas until my brother came to visit and requested them. Since then none of us can seem to get enough! I got more compiments on this meal than I have on any other. Also, I left out the green onions and it still turned out great :)

Creamed Green Beans

This was a fantastic dish, I do realize that this sounds a little gross but instead of the corn flakes.. I used frosted flakes! It was all I had and it turned out beautifully. It went faster than anything else :)

Beth's Spicy Oatmeal Raisin Cookies

These are the most wonderful cookies I've ever made. I ended up having to substitute butter for the shortening when I found I didn't have any in my house (which was still wonderful). They really did make the house smell wonderful and they were all gone within 5 minutes of me taking them out of the oven :)

I thought these were wonderful! They turned out perfectly. Instead of piping them onto the sheet, I took a couple other suggestions and dropped them by spoonfuls to make little round ones and they were adorable! Also to add a little extra sweet... before they are cooked, dust with a thin layer of confectioners sugar and they come out with a golden brown gloss on top and there's just a slight flavor added. Thanks for the great recipe :)
