Vegan Split Pea Soup I

This has been my go to split pea soup recipe for a couple of years. I use vegetable broth instead of water and usually end up using at least 4 cups more broth as the peas, barley and potatoes take on moisture and thicken. This soup is a winner and it's incredibly nutritious as well as delicious.

Zesty Quinoa Salad

Wonderful!! This is a refreshing way to gussy up quinoa for all vegans and food lovers alike. Wouldn't change a thing....maybe I'd double the recipe so there'd be more leftovers for the week.

Dijon-Tarragon Cream Chicken

Scrumptious! I added seasoned flour to the chicken before I sauteed it...put it aside and added mushrooms, garlic, and a minced shallot to the pan and sauteed with a little white wine until mushrooms were soft...then I added the cream, dijon, and fresh tarragon to cook the reamining few minutes. I doubled the amount of cream and dijon so I could use some of the sauce for the asparagas I served with it. This is a really easy recipe, and tastes like you spent hours making it. Thanks!

Mustard Crusted Tilapia

Five stars, for sure. My husbands loves this dish and I usually make it at least once a week. The flavors are pretty strong, but complement the tilapia perfectly. Yum--thanks!

White Chocolate Chip Oatmeal Cookies

I was looking for a great recipe that I could tweak a little bit. I had tasted a phenomenal cookie on vacation that had white chocolate chips, oatmeal, almonds, and big juicy cranberries in it. So....I added a cup of coarsely chopped almonds instead of the pecans, and a cup of reconstituted dried cranberries to the mix, and they are the new favorite around this house. My husband LOVES cookies, and usually wants only oatmeal raisin (Beth's spicy oatmeal raisin to be exact,) but he said this is his new all time favorite cookie. It's a terrific recipe! Thank you!!

Zucchini Herb Casserole

I've been looking for some diabetic friendly dishes, and this was perfect! I took other reviewers advice, tripled the herbs and garlic, used two tablespoons of fresh basil, and subbed organic brown rice. I only had a mixture of mexican cheeses, and decided to use that. This was awesome! My husband loved it too. Has a very italian flare to it (even with the mexican cheeses!) I'm having some of the leftovers today with some chicken, and it tastes just as good as last night. Thanks for the great recipe!

Provincial Tomatoes

I served these instead of a salad along with some BBQ chicken. These are so simple, and absolutely delicious as is. The textures of the broiled tomatoes and crusty cheese topping are wonderful together. Highly Recommended!

Strawberry Spinach Salad I

Figured I would jump on board and rate this five stars along with everyone else. It's so easy and delicious. I didn't have poppy seeds, and can't imagine that it would make any difference, but I'll try next time. I don't usually enjoy sweet salad dressings, but I'm happy I stepped out of my rut and gave it a try. Yum!

Triple Berry Crisp

Oh Good Heavens, this is soooo yummy! With every bite, my guests "ooohed" and "aahed." I followed one reviewer's suggestion and just softened the butter and mixed it right in, instead of cutting it in. It worked perfectly, and this crust/topping is amazing! Thanks for the recipe!

Taco Bake I

I absolutely loved this! It's almost too easy and good to be true. I'm pregnant, and I'm craving mexican food on a daily basis so having the leftovers was pure bliss. I have a feeling this will be my little boy's favorite once he gets here :-) Thanks for the delicious recipe!!

Tangy Chicken Fajitas

These are incredibly easy, and absolutely delicious!!!! I followed the recipe exactly, using a little less vinegar per some reviewers' requests. I removed everything from the marinade to cook, and about half way through the cooking process, I drained the excess liquid and then finished cooking. This will be my new chicken fajita recipe for sure. Thanks!

Easy Chicken Enchiladas

Amazing Italian Lemon Butter Chicken

Okay, this dish is outstanding! It is rich, and I usually use less butter, and have used less lemon juice. It can be a little powerful on the lemon side, but if you like lemon--go with it. I have made this dish for friends, and just my husband and I, and it gets rave reviews each and every time. Try it!

World's Best Lasagna

This recipe is amazing! I followed the advice of others and used fresh basil instead of dried. I ALWAYS make a double batch of the sauce, and freeze half for another batch of lasagna or for the world's best spaghetti (or whatever type of pasta you prefer.) You owe it to yourself to go the extra mile and make this dish. Everybody loves it!

Roasted Brussels Sprouts

These Brussels Sprouts are AMAZING!!! I prepared them for Christmas dinner, and everyone loved them. Many thought they hated brussels sprouts. Since Christmas, I prepare these about once a week--sometimes they're my dinner. Other reviewers are right, they're addictive!
