Tasty Lentil Tacos

I loved this recipe! Even my hubby loved it - he didn't realize at first that there wasn't meat until I mentioned it. We will definitely make this on a regular basis. As a side note - it took a little longer than 30 minutes for my lentils to get soft, so it took longer for me to prepare this dish than the instructions suggest.

Spicy Avocado Sauce

This was good, but I had to add a little extra to even out the flavor. We added lime and 1 extra avocado because the chiles were so spicy. Also, my hubby thinks we should have added an onion, so maybe next time. Overall, good and I will make again.

Hot and Spicy Tofu

I love this recipe! This was my first attempt to cook tofu and I think it turned out just fine. I may do a little more reading to see if I need to drain it or something next time, but it still was excellent. I may add a few more veggies next time in order to have some diversity. Also - this recipe is quite spicy, so if you prefer less spice you may want to cut back on the chile pepper or red pepper flakes.

Green Chili Stew

This recipe was good, but 2 pounds of meat was WAY too much. It was unbelievable how much meat there was compared to the other ingredients. Next time I will scale the meat back to 1 pound.

Avocado Soup with Chicken and Lime

I absolutely love this recipe! I have had it since 2009 (I'm surprised I didn't write a review sooner). The recipe is so easy and it is wonderful. I have never had much leftover when I make this. Truly the best! I usually add corn for a little crunch and sweetness and serve with sour cream and some cheese sprinkled on top.

Caramelized Onion and Gorgonzola Pizza

This pizza was okay. The flavors are very strong, so unless you're eating it with something else (which I wasn't) then it may be a little too intense. I may make it again as an appetizer for a party or something, but not as a meal for me and the hubby because I don't think I can handle the strong flavors.

Baked Teriyaki Chicken

I was pretty disappointed with this recipe. I actually made it twice and didn't like it either time, but wanted to try again just in case I messed something up the first time. I would have only given 1 star, but my hubby said it was fine (not good, but tolerable) so it got 3 stars for his remarks. I followed the directions exactly, so my review is true to the recipe. I will not be making this again.

Banana Banana Bread

I really liked this bread. I did add about 3/4 c walnuts, as suggested, and a little cinnamon and vanilla. Other than that, I followed the recipe. I agree that it does need more cook time. I cooked mine for a little more than 70 minutes and when I cut it the very bottom of the bread was still a little undercooked. I will definitely make this recipe again and again.

Tzatziki Sauce I

Well, I can say that I have never had a Tzatziki Sauce before, so I don't have anything to compare this one to. Overall I thought that this was a good recipe, but I felt like maybe something was a little off. I did add finely chopped cucumbers as other's had suggested. I will definitely make this again.

Italian Spaghetti Sauce with Meatballs

I skipped the meatballs and made only the sauce because we were short on time and didn't really need the meat, so this is for the sauce portion only. I did make many changes according to other's suggestions and let me say this was awesome! I will make this recipe from now on (as long as I have the time). Here are some of the changes I made: added 2 celery stalks (chopped), used 1 (28 oz) can crushed tomatoes and 2 (14 oz) cans of diced tomatoes, a little extra sugar, added italian seasoning, green bell pepper, and a serrano pepper. I will avoid that jarred spaghetti sauce at all cost from now on, because this recipe was so easy and so delicious! Thank you Jeremy!

No Bake Cookies III

I made this over the weekend and it was awesome. I think I didn't boil them long enough because they were still soft (better luck next time). Despite my mistake, I followed the recipe exactly and these tasted awesome (just like I remember from childhood)!!!

Wow! This recipe was great. I did follow others' suggestions and decreased the butter and honey to just 1/4 c each and left the mustard at 1/4 c. I will definitely make this again!

Best Ever Pasta Salad

I really wanted to like this, and maybe it was just me, but I really was not impressed with this recipe. I felt like it was missing something, but since I'm not sure what it was I probably won't make this again. I just hated wasting all those veggies, but it just seemed bland and the dill was the only thing I could taste. I can see how this recipe has potential, but I'm not sure what to do to make it better. I'll keep looking for a pasta salad recipe, sorry.

Grandma's Slow Cooker Vegetarian Chili

I really enjoyed this recipe, even though I made many changes to it to suit my taste. I used a can of black beans instead of black bean soup. I also added an extra can of kidney beans instead of the baked beans. I put in 2 onions, a serrano pepper, mushrooms, extra chili powder and subbed cumin and cayenne for the parsley, oregano and basil. So, it really wasn't the same recipe, but the original was a good start. The only problem I had was that I cooked this on the stove (since I made it last night after work) and most of my beans broke. I was careful to stir them gently, but they still broke. Next time I cook this on the stove, I will add the fresh vegetables first and let them soften a little, and then add the beans to heat. This way I don't risk breaking as many. Overall, excellent recipe and I will make this all the time because it was so easy.

Zesty Slow Cooker Chicken Barbecue

Holy Moly! I can't believe how tender this chicken turned out. I actually felt like I could cook after I made this. I have never had chicken that was so tender. I follow some other suggestions and added a little cayenne (we like it spicy), garlic, onions, and some liquid smoke. It turned out awesome. I can't wait to try it with different kinds of BBQ sauce. Oh, and I did add a little flour towards the last half hour to thicken up the sauce. Perfect, perfect, perfect! I can't get over how easy it is to make great chicken!

Greek Pasta Salad III

Ok, so I changed this recipe so much that it barely looks like the original. But I had to review it because I got such great ideas from the recipe and the other reviewers. I added just about everything I could find in my fridge: artichoke hearts, sun-dried tomatoes, olives, pepperoni, pepperoncini peppers, cucumber, red onion, diced pimentos, and a few shreds of leftover carrot. With all the additions, it made the biggest batch of pasta salad I have ever seen, but I have no doubt that we will finish it in a few days. I did stick with just 8 oz of pasta and that was enough for my huge batch. And I only added 1/3 c each of red wine vinegar and EVOO. I probably could add a touch more vinegar, but overall this is awesome! I can't get enough of this salad!
