Crunchy Peanut Butter Balls

Reviewed: Feb. 7, 2008
I love this recipe! It is quick and easy to make but tastes incredible. I tried this first for Christmas "treat" baskets and my family loved it. I just made them again today for our Relay for Life bake sale at work and have been bombarded with emails and phone calls for the recipe. I laugh because it is one of the simplest and least time consuming treats to make yet everyone thinks I am this "cooking goddess". Enjoy, I highly recommend!

Tiramisu Layer Cake

Reviewed: Nov. 2, 2008
One of the best cakes I have ever made!!! I did make some of the changes suggested though. 1. I doubled the Kahlua (coffee liqueor) everywhere it was called for. 2. I used chocolate coffee beans instead of regular coffee beans and I ground them to a fine powder. This helped make the cake look more mocha instead of spotty like poppy seeds. 3. I used 1 and 1/2 boxes of cake mix as this was for a cake contest so I needed it to look BIG! I had to make 2 cakes for it so I ended up using 3 boxes. 4. I also wanted the filling to be a bit thicker in between layers as the filling and frosting are what truly makes this cake so I used 1 and 1/2 of everything. 5. Make sure and use the HEAVY whipping cream as I used regular whipping cream on one of my 'practice' cakes and the frosting and filling were not as thick and slid off. 6. I made 3 layers per cake, 2 were with coffee grounds and the middle layer was plain. I did not drizzle the coffee in as I didnt want it to get too soggy. I made the cakes the night prior and put them in the fridge (covered) so that they were nice and cold when I assembled them. Our cake contest is not complete yet.. we judge 2 cakes per week over several weeks... but several people have told me that I won already!!! I will keep you updated. Thanks for the GREAT recipe!

Carla's Fruit Dip

I love this recipe! I make it whenever I have a party at home! I do use the strawberry cream cheese (8 oz) and the thicker cool whip and sometimes add a little lemon or pineapple juice to it as well. Very Yummy!

Tender Italian Baked Chicken

Reviewed: Jan. 17, 2010
Such a good and easy recipe! I needed something for dinner without going to the store and found this! It was very good. I did add some more spices as others suggested: parsley, thyme, and orageno. I also flipped the breasts at the end so the other side could crisp as well!
