Slow Cooker Western Omelet

I made this for a breakfast pot luck for the office. I followed the directions exactly, but followed the suggestion from another and used sage sausage instead of ham. Cooked for 8 hours and smelled wonderful! But when we went to eat it, it was dry. Needless to say, I still had half of what I brought in. I don't know where I went wrong? I think if I baked it, it would have been better.

Refrigerator Pickles

These were very good! I did follow the advice of others and cut sugar in half. Not too sweet and not too vinegary. Also, I did not cut paper thin, I cut a little thicker. Perfect! Thanks!

Norway's Best Pepper Cookies

My family originated from Norway and I never heard of these before. But I made them for my son as an extra credit for a report on Norway for his class. I cut the cookie into fourths thinking everyone would at least get to try. To my surprise they came out of the oven the same way they went in! They did not melt like a sugar cookie. The kids looked at them and thought they were dog biscuits! But they tasted great! I don't know if I did anything wrong? I followed the recipe exactly. BTW, my son got an A. Thanks!

Tomato, Cucumber and Red Onion Salad with Mint

I liked the flavors blended together. What I did not like was the large chunks of veggies. Next time I will cut cucumber into quarters and use halved cherry tomatoes instead.

I tried this a couple of times and loved it. Last night, I had some red wine while cooking. I added a good splash (about 1/4 to 1/2 cup) of wine to cooked chopped bacon and onion and let simmer for 10 minutes till it reduced then added the tomatoes. Oh my god, perfection!

Spinach and Feta Pita Bake

I made these last summer when the family and I went camping and I made over an indirect camp fire. They turned out delish! I bet you can do them in the BBQ for a hot summer night's dinner.

Baked Haddock

Excellent! The only things I added were - a good dash of old bay seasoning with bread crumbs and a squeeze of lemon in with the melted butter before drizzling. Husband and two teenagers loved it.

Quick and Easy Alfredo Sauce

This may be a good base to start but in my opinion there is too much butter! I have made mine similar by using lower fat cream cheese, one cup of chicken broth and a handful of parmesan cheese. I also add 1/2 red pepper diced, 1/3 cup green onions, chopped and four garlic gloves, minced and saute in a little olive oil before melting the cream cheese. My family (husband and two children) love my recipe!

Beef Barley Vegetable Soup

I was looking for a recipe to use leftover roast from Sunday dinner. I used my roast, but I shredded the meat and threw everything in the crock pot in the morning before work. 8 hours later had yummy soup! Thanks for the recipe!

White Bean Chicken Chili

I brought this recipe in for our office chili cookoff contest on halloween. I won! Thank you so much! Everyone was skeptical at first, not the typical chili, but once they tried it they were hooked! I did follow other suggestions: using a jar of salsa verde, 2 cans northern beans, one can corn and one more cup of chicken broth. Also, I used the entire rotissere chicken. I had to stretch out to feed 15. Using lime made a big difference too, but add to your bowl not to entire recipe.

Penne Pasta with Cannellini Beans and Escarole

I had to add some meat to it for my family, so I added mediteranian seasoned turkey sausage and a package of spinach instead of the escarole. Excellent!

Neat Sloppy Joes

I think this recipe called for too much brown sugar. My family all commented on the sweetness. I suggest cutting back a bit. Otherwise, it was still very good.
