Best Brownies

Whoever says these are "cake like" brownies is very mistaken. However, I went with other reviewers and didn't beat the batter, only stirred by hand. They were the most moist, fudge like brownies I've ever had! No frosting needed!

'Got Some Crust' Macaroni and Cheese

First off, I made this for my parents last night -- my father, who is not a big macaroni and cheese fan, LOVED this. I did make some changes however. As another reviewer did, I used crushed Saltine crackers instead of bread crumbs -- I think this added an extra yummy flavor. The cheese I used were a bit different. I used Romano instead of Parmesan, and I also added about a cup of mozzarella. After I put the cracker crumb/cheese mixture on top, i brushed with butter for a little added moisture. It was delicious -- no leftovers, and they already want me to make it again one day later!

My Crab Cakes

This recipe was wonderful! A lot of crab cakes have the super fishy taste, but these ones had just the right flavor. I definitely would recommend cutting down on the crackers, as it causes the crab cakes to be very dry and crumble when you are cooking them. I added a couple tablespoons of olive oil to the mix to moisten it more. Also -- make sure you brown them enough, as it really makes the flavor!

Triple Chocolate Cream Pie

This recipe was quite good -- very rich. However, it seemed like trying to fit a gallon of milk into a shot glass. One pie crust is in no way big enough for all of what is supposed to go into it. I had to omit one tub of whipped cream and still ended up having extra from each chocolate portion (which was fine when poured into dessert glasses and layered!)

Pepperoni Stuffed Mushrooms

This recipe is very good! My family has always made sausage stuffed mushrooms as an hors d'oeuvre, and you couldn't really tell it was pepperoni. Instead of round butter crackers, I used Sociables. The extra seasoning in the crackers made them very tasty with a zing! Also, it wasn't really necessary to use chicken broth. Water worked just as well. I also put a sprinkle of mozzarella on top.
