Caramel Snack Mix

I just finished making this mix, and it turned out perfect. I did make a few alterations. I used 2/3 c + 1 Tbsp. sugar, left out some of the nuts. I made part of it without nuts as I am not supposed to eat nuts. It was good but not quite what I expected. Next time I will use a recipe that has condensed milk in it to make it more of a caramel flavor instead of a toffee flavor. My husband likes it, so that is good.

Logan Bread

This is fantastic. It is very filling. I would like to have the nutritional information so I can figure out how many points it would be for Weight Watchers. Will definitely make it again. I don't care too much for raisins in recipes, so I substituted dried cranberries. I didn't have any oil, so I substituted 1 Tbsp butter and 1/2 cup water. It still turned out good.

Szechwan Shrimp

The sauce was really good; however, as others have stated, it was too dry. I doubled it, and it still was not saucy enough. I decreased the crushed red pepper to 1/8 tsp for 4 servings. I added broccoli, red pepper, and carrots and served it over brown jasmine rice. I will make this again, but next time I will make more sauce and add a little more shrimp.

Lentils and Rice with Fried Onions (Mujadarrah)

I made this recipe tonight, adding the cumin and a sprinkling of cinnamon and added some beef bouillon. I also added some garlic. I think the recipe is basiclaly good, but the amount of water should be more specific and also the amount of salt and pepper. My husband liked it, so I will make it again but will add about 1 tsp of beef bouillon and about 1 tsp of salt. I could have done without the cinnamon, but the cumin was good.

Oatmeal Whole Wheat Quick Bread

I just made this bread yesterday morning for breakfast. I baked it the 20 minutes recommended, but alas it was not done when I cut it. I had put in an extra 1/3 c of quick oats because so many said it was too moist to pat into a ball. I think the best solution is to leave it moist as per recipe and put it in a small loaf pan. I haven't tried it, but I will the next time I make it. I also added some flax meal to give it a little more fiber and used virgin olive oil to make it more healthy and Weight Watcher friendly. I definitely will make it again. It had good flavor. The key to remember is that this is a quick bread, not a SWEET bread.

Crustless Spinach Quiche

I changed the servings to 2, and put in one egg and one egg white. I also used 2% Mexican mix shredded cheese, 1/2 cup and 1 tablespoon of cream cheese as I did not have Muenster cheese. It was very good. My husband liked it, and I will make it again. It is about 4 points for Weight Watchers.
