African Chicken Stew
I used 1/3 cup of peanut butter; omitted both pepper spices and servced it with a bottle of Thai garlic chile sauce on the side, otherwise my 3 year old wouldn't have eaten it; added carrots & celery; omitted the potatoes; used 1/2 a roaster; cooked it in a crockpot for 2.5 hrs after browning the chicken; pulled the meat and returned it to the casserole; served it over saffron rice. The sauce was too thin! So I thickened with 1 TB flour - perfect. My 3 year old *loved* it - what pre-schooler doesn't like peanut butter? My husband asked me to save the recipe. Next time I'll use MORE peanut butter (3/4 cp as specified).

Cranberry Whip
I tried serving this as a side dish, but its really too sweet. It would make a nice desert to supplement your regular holiday pies. I don't think I'll be making it again, but it was very good.

Asparagus, Orange and Endive Salad
I made this for a dinner party and everybody loved it, I might cut back on the amount dressing next time, probably just reduce the vinegar.
