Chayote with Egg and Cheese

Thought this was delish! I swapped the American for cheddar cheese but do think pepper jack would be yummy too. It reminded me of a cross between a hash and omelette, although the onion made it taste sweeter (vidalia). Would definitely make it again.

Baked Honey Mustard Chicken

Overall, not a bad recipe. I used the full amount of paprika, and I didn't find it overpowering. If anything, I would probably cut down on the amount of honey, as I found it a bit too sweet. Then I'd anticipate needing to reduce the paprika. Something I might make again, but I'd have to make at least those changes.

Creamy Hot Cocoa

This was very yummy. I wound up using fat free milk and adding just a little bit of whole milk to get it creamier instead of the half and half. I've made it twice. Once I made it with the lower amount of sugar like others said. And the other time, I did that amount with half Splenda and half sugar. Tasted the same to me. And hubby didn't complain which means it's the same to him. I'd absolutely make this again, just use the substitutes to lower the calories on it.

Hummus III

Oh this was delicious! I don't like the brand that has been selling in the store and decided to try to make some myself. I had read the reviews and found Head's to be really helpful and glad that I made with most of the changes that were noted. I used a bit more garlic than mentioned (4 cloves and some minced from the jar) since I was trying to make it like the garlic hummus I used to eat, and I think that it may taste a litle better if the garlic were roasted first. I'll try that next time. But this reminds me of the stuff I used to love and not what I have to buy at the store. Thanks for the recipe!

Easy Brownie Shortcake Dessert

I was looking for something new tonight and this was just want I wanted, since strawberries are in season right now. I wound up using 2 cake pans instead of one so that I avoided having to cut it in half (this also cut the baking time down to about 25-30 min). Also, after cutting the strawberries, I added a little bit of sugar to them in order to contrast it with the sour cream topping. Overall, it was a great mixture of flavors that balanced each other out really well, and most important, everyone loved it. Next time, I think I'll reduce some of the sour cream since its such a strong flavor and increase the cool whip, which also lowers the fat and calories as well. Great new recipe to add to my collection!

Stuffed Pork Chops III

Thought this was a great recipe. I added garlic to the bread crumb mixture, and I used chicken broth as others had noted. The biggest difference for me was in the prep...I didn't have any toothpicks so instead, I make a slit on the side about 1.5 inches long and used the knife on the inside to separate almost all of the rest of it. I would not recommend trying this if you are a newer cook since the knife can cut through. I then put all the bread crumb mixture in through this slit and pushed it to all corners of the chop. It was a lot neater and I didn't have to worry about the bread crumbs coming out. Great recipe with ingredients on hand (except the beef broth for me ;)

Glasser's Greek Marlin

Thought this was an alright recipe. I didn't have any tomatoes or even canned diced tomatoes in, so I left this out. This may have changed the recipe quite a bit, but it was the flavor in the fish that was lacking. I also used lemon juice, like some others, and otherwise followed the recipe. I found that I had to cook the swordfish 10 min a side as others suggested, and it came out as somebody else said, a little tough. It just wasn't as good as the marinade I buy at the store but was out of that day. I will say, I did take the rest of the garlic, butter, basil, etc mixture, added a small amount of sugar as they would in pasta sauce (it was a bit too bitter) and added it to some pasta that I cooked up. This was delicious! Just the right mix of flavors.

Pasta Pomodoro

I made this as a side dish for another meal, so I cut it in half. It came out pretty good. I used tomato that I had left over instead of the plum tomatoes. Next time, I would increase the tomatoes, onions, and garlic for a little more flavor.

I always used to love cinnamon toast as a kid, but haven't made it in a while. This was a pretty good recipe, although I softened the butter in the microwave before spreading it on the toast.

Crab Delights

My mom has been making these for years, and I used this recipe to base mine off of. The major difference is that we use one can of tuna (8oz) instead of crab since not everyone in the family likes crab. I used the Old English jar of sharp cheddar cheese that mom always used, 6 tablespoons of butter, 1 tsp of minced garlic from those little jars, and about 1/4 tsp seasoned salt, leaving off the parsley. I left the mayo amount the same. These are about what my mom used to make and are perfect for freezing and taking out as a snack, small lunch, etc. Delicious!

Toasted Garlic Bread

This was delicious garlic bread. The only thing I changed was leaving off the mozzarella cheese (thought the rest of the meal had plenty of cheese). I also used minced garlic from a jar, which worked well. As somebody else had done, I left the butter in the microwave for a little longer than I had planned, so part of it had melted and the rest was just soft. The consistency to spread it was easy, though. Thanks for the recipe!

Pizza Pinwheels

This recipe was just alright. I've had much better recipes for stromoli (which this mimics). I found this to be a little bland. I followed the recipe almost exactly, although I also used a little olive oil to brush on the top to get that slight browned look. These fell flat by the time I got them to where I was going. I also find that using pizza dough and Italian seasoning is much more full of flavor and much shorter on time...You only have to roll one thing and cut it after it's done cooking.

Great Pumpkin Dessert

I like cake much more than pie, but my husband had requested pumpkin pie. So, I tried this recipe and it did the trick. It's almost between a cake and pie, so both of us were happy. I left off the walnuts. I think what made this so tasty for me was the yellow cake mix drizzled with the butter on top; it made it taste a lot less pie-like. I added more cinnamon as some of the others had suggested.

Yummy Honey Chicken Kabobs

Everyone loved this recipe! I also changed the skewers so that I had one of all chicken and then others with vegetables on them, since there are different cooking times. I had actually made this when we had family come over, which I don't think I'd do again, just because of the amount of work required with all the spearing of the skewers. It worked well with all the vegetables as well. I could see using this again for smaller crowd or even marinading breasts and cooking it in the oven. Great recipe!
