Hudson's Baked Tilapia with Dill Sauce

This is a simple and tasty recipe. The dill sauce tastes a lot like ranch dressing and would make a great veggie dip, but IMO the fish tastes better without any sauce. My husband and I loved this dish. The sliced lemons add just the right amount of flavor and the seasoning is light and doesn't overwhelm the taste of the fish. Easy to make and healthy, too.

Mom's Apple Pie I

Ever since I made this pie and brought it to our family Thanksgiving dinner, I'm the designated apple pie maker for our holiday get-togethers. This is a marvelous recipe and the whiskey gives it a subtle, spicy kick. It's a winner!

Bread Pudding II

I'd never made, nor eaten, for that matter--bread pudding. I love rice pudding so I thought I'd give this a try. Didn't want to make too much so I cut the recipe down to 4 servings, using 2 glass custard cups with 1 slice wheat bread per cup. Used 1 large egg, omitted the raisins and used Splenda to sweeten. Put the glass custard cups on a metal sheet and baked for 35 min. It rose up like a souffle. Topped it with whipped cream and ate while still hot. YUM! Made a wonderful dessert for my 10 year old and I. Tasted rich and fattening without actually being high in calories. Super easy and quick to prepare, and a great treat for a cold rainy afternoon. Will make again for sure!

Healthy Banana Cookies

I was looking for a recipe to use up the very ripe bananas I had in the freezer, and this one stood out because it seemed simple and healthy. I used chopped dried cranberries instead of dates and they came out sweet and moist and flavorful! I also added a generous amount of nutmeg, allspice and cinnamon. Easy, healthy, and delicious, what more could you ask for? Definitely making these again!

Chocolate Banana Bread Pudding

I wanted to make it a little healthier, so I used whole wheat bread and omitted the sugar and the chocolate chips. I mashed the banana (which was very mushy and ripe) and added cinnamon, nutmeg, allspice and tiny amount of ground cloves. I thought that the banana would make it sweet enough, but it needed just a tiny bit of extra sweetness, so I sprinkled a little Splenda on it after baking and that did the trick. Was trying to keep the calorie count low, and still have a rich, healthy dessert. Mission accomplished! This recipe will be great to experiment with to suit my mood. :)

Award Winning Soft Chocolate Chip Cookies

These are AWESOME cookies. I was looking to make cookies that were more cake like, not flat and chewy. I halved this recipe, but didn't have a large package of instant vanilla pudding so I used 1 small package fat free/sugar free vanilla instant pudding and 1 package fat free/sugar free white chocolate instant pudding. The taste is amazing. AMAZING! The texture is soft, and they stay fluffy, unlike Toll House cookies, which always turn out flat and chewy and greasy. This is definitely going to be my chocolate chip cookie recipe from now on.

Blackberry Cobbler

Wow is this ever good. So rich and buttery even my husband liked it and he is not a big fan of pies or cobblers. I used fresh blackberries picked that day and increased the amount by a cup. Heavenly.

Easiest Egg Nog

This is SO much better than store bought egg nog! I used 2 cups of 1% milk and 1/3 cup of fat free half & half just to give it a little richer taste. It was really delicious!

Christmas Cake

This was my first time making fruitcake and I could not be happier with the results! I used golden raisins but otherwise followed the recipe exactly. It makes a lot - I filled 2 loaf pans plus the 8x8 pan. It was delicious right out of the oven but much better soaked in brandy and stored wrapped in waxed paper and foil to allow to 'ripen'. Reminds me of my mom's fruitcake I loved as a kid. Thanks for sharing.

Creamy Rice Pudding

I had a little over a cup of leftover cooked rice and decided to try this recipe. I used 1% milk and dried cranberries because I didn't have any raisins. I added the sugar, salt and milk to the pot the rice was in and cooked everything in one saucepan. When I added the egg, I mixed it first with the rest of the milk and poured it into the mixture slowly. It turned out perfect. SO easy!
