Tofu Creamed Spinach

This was great! I used feta cheese and didn't have any garlic, but it was still delicious. I'm big on healthy recipes, so this is a new favorite!

Iced Pumpkin Cookies

These were pretty good. I was going to rate it four stars, but first I would have to see how it is with these adjustments, which I would follow next time: as one other reviewer said, add more pumpkin and possibly more sugar--but, then, probably reduce butter so they're not overly moist. All in all, a good way to use my leftover pumpkin.

Cranberry Orange Bread

Yum! This was really good, and I wasn't even sure if I liked this combination. I did make some changes, based on reviews; I added 1/4 cup extra orange juice and two tbsp plain yogurt, for extra moisture, plus I switched half the flour to whole wheat. I'm only giving it four stars because I think it would have been dry otherwise. With these changes, it's 5 star, really tasty!

Mary Anne's Moist and Nutty Carrot Loaf

While the flavor of this was pretty good, I encountered several problems. First off, I did make substitutions--I made only one loaf and used half brown/half white sugar, and 1/4 cup apple sauce in place of oil. These were suggested, however, and when I cooked it for 45 minutes in the 9 by 5 pan, it looked great. However, the next morning when I cut it up the middle appeared not to be fully cooked. I had checked it with a toothpick, and it had come out clean. I did think this was good, though, and worth re-trying. Next time, I will: 1) drain the pineapple, 2)use (for one loaf) 1/2 cup oil (might replace it with apple sauce), 3) use a total of 1/3 cup sugar, maybe less, and finally 4) cook it shallower pan so it will cook more evenly. Just something for others to think about.

Red and Sweet Potato Salad

I made this before as written and it was good, but I made some changes and it was irresistible! First, I used 1.5 times the mustard/vinegar mixture, used 2 tbsp mayonnaise and 6 tbsp yogurt instead of all low-fat mayonnaise, and used all sweet potatoes. It was really, really good! It might just be personal preference, but I much prefer sweet potatoes.

Szechwan Shrimp

This was great! It was extremely simple, and turned out very flavorful. It reminded me of shrimp dishes I've had in Chinese restaurants before. I followed the recipe almost exactly, with a few changes: 1) I can't handle spicy and put in just a few red pepper flakes, and 2) I made 1 1/2 times the sauce. I recommend this, but the portions given serve about three as a side dish, not six. Enjoy!

Baked Honey Mustard Chicken

This was great--really tasty! The honey mustard sauce was very good-a little spicy to be used as a dipping sauce, but it formed a really nice gravy consistency after baking. I will definitely make this again!

Cream Cheese Frosting II

I absolutely love this kind of frosting! I use it on red velvet cupcakes all the time (it perfectly fits 24 cupcakes). My mother used a recipe from a cookbook before, but I like these proportions better. Definitely recommend it!

Awesome Carrot Muffins

These muffins are great! The only reason I rated it four stars was because I substituted apple sauce for the oil, but the texture came out wonderful; it was very moist and light, and quite delicious!

Stir-Fry Spinach Salad

This is absolutely delicious! The sauce is good, but is made excellent with 1 tbsp honey. It tastes like the "brown sauce" you get at a Chinese restaurant, only sweeter and tastier. The ingredients come together really nicely to make this very enjoyable! Plus, I added peanuts for decoration and crunch.

Delightful Apple Spice Muffins

These muffins are very "delightful." I used the recipe for "Delicious Apple Sauce," and that created chunks of apple in the muffin...delicious! And I added crushed pecans, which gave it a nice touch. I highly recommend this recipe for anyone who likes apples.

Peanut Butter Vegetable Chicken Soup

This is delicious! When I was making it I was doubtful as to how flavorful it would be, but if you add the right amount of salt and pepper (and in my case a pinch of ground cumin), it's really very good. I will definitely make this again soon!

Orange Juice Cake

This cake is very good:glaze is very moist and delicious. 5 stars: orange supreme cake mix, not yellow, and adding more sauce. I baked in a regular cake pan, not a bundt pan, and it took about 40 minutes. It is soooooooo good! The glaze is delicious! I don't even like cake, and I was in heaven with this!

Oatmeal Raisin Cookies VII

These cookies are so delicious. I made some adjustments; adding more brown sugar and less white, and putting in a tablespoon of baking powder b/c I didn't have self-rising flour. Other than that, it was very good; the edges are crispy, but the middle are moist and chewy.

Sweet Corn Bread

This bread is very good. It is nice and moist, but doesn't completely fall apart when you pick it up. The creamed corn was a nice touch, really made it good. The only thing is mine needed to cook for longer than it says.

Easy Salsa Meatloaf

This meatloaf was very good. It was not hard, like some are, but was very moist. The only thing is you really need a lot of salsa, possibly double the amount. I used a peach mango salsa, and it was really good. Also, I think extra cheese will add some nice flavor to it. I will make this again.

Banana Muffins II

These muffins are really good! I never bake often, and mine came out great. I added a couple of things, but I think they would have been great without it, too: first, instead of 1/3 cup butter I put in 3 tablespoons peanutbutter and 2 tablespoons regular butter. Also, I mixed in 1/3 cup granola and 1/2 cup walnuts at the end, and that makes a big difference. I can't wait to make them again!
